Hello! Welcome to Miki's Kitchen. Today is the 52nd day. I'll show you how to cook hijikini
or simmered hijiki. Hijiki is one of the seaweed which is rich in nutrition. Hijiki has a lot of
calcium and dietary fiber so you can make your bones stronger and keep your intestines healthy
by eating hijiki. Well, let's get started cooking. First, soak shiitake mushrooms in water.
As I said yesterday, it takes a long time to make them soft so I recommend soaking them overnight.
On the other hand, hijiki needs only 10 minutes to make them soft so put hijiki in a bowl
and fill water. Okay. Then, let stand for about 10 minutes. Next, peel carrot. Okay.
Then, cut abura-age. This is fried tofu into same size of the carrot. Okay.
The shiitake mushrooms get soft now so squeeze them and slice them like this. Okay.
And don't throw the strained water of shiitake mushroom away. I'm gonna use this as dashi stock.
Well, hijiki becomes soft now so drain them over strainer.
Okay. Okay. It's time to fry them so heat the pan and put vegetable oil in it.
Then, add carrots and shiitake mushroom and abura-age in the pan and fry them on medium heat.
Then, put hijiki in the pan for a few minutes. Okay. So now, strain water of the shiitake mushroom
Simmer them for about 10 minutes. Okay. Turn off the heat and add green soybeans in it.
So, take the beans out of the pot and put them in it. This is frozen green soybeans
so if you use fresh green soybeans, you have to boil them in advance. Okay.
That's it. So, serve them in a cup. Okay. It's time to eat. Itadakimasu.
It tastes good. Hijiki has a lot of calcium and dietary fiber so you should eat it and keep
healthy. Well, tomorrow, I'll use another kind of dry food so see you tomorrow.
