Hi everyone, welcome to Cook Stacey Cook.
Today I'm going to show you another of my quick and easy dinner recipe,
beef and bell pepper stir-fry.
This dish goes very well with rice or noodle,
and you may already have all the ingredients we need in your kitchen.
So let me show you how I make it.
First, we will mince some garlic.
Crush the garlic with your knife and take the time to finely mince them.
Next, we will cut half of an onion into square pieces.
I'm using purple onion today for its color.
You can use any onion you have. Aim for roughly this size.
We will cut some bell peppers into square pieces too.
I'm using both green bell pepper and red bell pepper for a more colorful dish.
You can use any bell pepper you have.
When cutting the pepper, take the time to trim off the white membrane inside.
Cut the bell pepper slightly bigger than the onion.
Now the beef. We will cut the beef into slices.
You can slice them thinner or thicker to your preference.
Try your best to cut across the direction of the muscle fiber.
Marinate the beef with soy sauce,
dark soy sauce,
oyster sauce,
sugar,
cornstarch,
a little bit of baking soda,
black pepper,
and some water.
Then mix them well.
After mixing the marinade thoroughly,
add a little bit of oil and sesame oil.
Make sure you add the oil after you mix the marinade with the beef.
We don't need to marinate the beef for a long time.
Now we are ready to cook.
Heat up the pan over medium-high heat and add some oil.
When the oil is hot, briefly stir-fry the onion.
The goal is to just get rid of the raw taste.
When most of the onion is coated with oil,
season with a little bit of sugar and salt.
Stir-fry a little bit more to mix the seasoning with the onion.
Then remove the onion from the pan.
Now with the remaining oil in the pan,
stir-fry the bell pepper.
The goal here is also to get rid of the raw taste.
But bell pepper will take a little longer than the onion.
Season the bell pepper with a little bit of sugar and salt.
Continue to stir-fry the bell peppers for about 30 seconds longer.
Then remove them from the pan.
Now we will stir-fry the beef.
Add a little more oil to the pan then add the beef.
Spread them out and let them pan-fry until the bottom is slightly brown.
Then flip them over and let them pan-fry a little bit more.
When this side is also brown, add the garlic.
Adding the garlic now will prevent the garlic from turning brown.
Garlic is an interesting spice.
Its taste changes according to the degree of browning.
After stir-frying the beef briefly with the garlic,
add some rice wine and continue to stir-fry until most of the rice wine has cooked off.
If you cannot use wine in your cooking, just leave it out.
When most of the rice wine has cooked off,
season with some dark soy sauce, oyster sauce, regular soy sauce and a little bit of sugar.
Keep stir-frying until the color of the beef looks even.
Then add some water.
The water will thicken up and turn into a sauce.
When you see the liquid starts to thicken up,
add the onion and bell pepper back to the pan.
Mix them well.
Now turn off the heat.
Season with some black pepper.
Give everything a few more quick toss and we are done.
Look at the color of this dish.
I wish you can smell it too.
It smells so good.
The beef is tender.
The onion and the bell pepper are cooked to the perfect consistency.
This will go so well with some rice.
I hope you will give this dish a try.
