Hi everyone, welcome to Cook Stacey Cook. Today we are making a delicious beef
stir-fry with bell pepper and mushroom. This stir-fry is easy to make and I can
say with confidence that it's better than takeout. I will show you how to cut
and marinate the beef so it's tender and flavorful. You will be able to recreate
this dish at home after watching this video. Let's get started. We will start by
finely mincing three cloves of garlic and preparing three slices of ginger.
Then cut four green onions into two-inch sections. Keep the pieces from the stem
part and the leafy part separate because we will use them at different times
during cooking. Next, cut the mushroom into slices and cut the bell pepper into
bite-sized pieces. It's more trickier to cut the bell pepper into triangular
shapes like this or diamond shapes. This will give the final dish a more
appealing presentation. For the beef, the cut I am using today is called the
tri-tip in the United States. This cut is great for stir-frying because it has
long and uniform muscle fiber. Pay attention to the direction of the muscle
fiber and cut the beef into slices by cutting across the fiber. If you cut
parallel to the muscle fiber, the beef will be very chewy. Marinate the beef
with soy sauce, dark soy sauce, a little bit of water, a little bit of sugar, a
little bit of baking soda, some cornstarch, and a little bit of white
pepper powder. Evenly mix everything until there is no more liquid left in
the bowl. Then mix in a touch of cooking oil and sesame oil. The last thing we
need to prepare is the cornstarch and water mixture. Simply mix cornstarch and
cold water together and stir until all the cornstarch dissolves. Now we are
ready to cook. Add some oil to a hot pan over medium-high heat. When the oil is
hot, add a touch of sugar and some salt to the oil and immediately add the bell
pepper. Stir-fry the bell pepper for about 50 seconds to 1 minute. Adding salt
and sugar to the oil helps to preserve the color and crisp texture of the bell
pepper. The goal here is to cook it just enough to get rid of the raw taste. When
the time is up, remove the bell pepper from the pan. Next, add the mushroom to
the pan and stir-fry for about 45 seconds. You will notice the mushroom will soak up
all the oil and your pan will look very dry. You don't need to add more oil. After
stir-frying for 45 seconds, season the mushroom with a touch of sugar and some
salt and continue to stir-fry for 30 more seconds. When the 30 seconds up, add
a touch of rice wine. If you cannot use alcohol in your cooking, simply replace
with an equal amount of water. The steam created by the liquid will cook the
mushroom quickly. So give the mushroom a few quick toss and remove it from the
pan. If you cook it for too long at this point, the mushroom will start to release
a lot of water and shrink. Now add a little more oil to the pan and we will
stir-fry the beef. Add the ginger slices to the oil first and let it sizzle in
the oil briefly to release some flavor. Then add the beef to the pan and spread
it out. Let it pan-fry until the bottom is slightly brown. While the beef is
pan-frying, add the stem part of the green onion to the pan and let it sizzle
in the oil. Once the bottom of the beef is slightly brown, turn it over and add
the minced garlic. Mix the minced garlic evenly with the beef. Then add a touch of
rice wine. You can also use Japanese sake or Korean soju here instead. If you
cannot use wine in your cooking or you simply don't have it, just skip it for
this step. Do not replace with any kind of vinegar. After the steam created by
the wine has evaporated, season the beef with a little bit of soy sauce and dark
soy sauce. Keep stir-frying the beef until the color looks even. Then we can
add the cornstarch and water mixture. Remember to stir up the mixture because
cornstarch tends to settle on the bottom. Mix the cornstarch mixture with
the beef and it will quickly boil and turn into a sauce. At this time, we can
add the mushroom, bell pepper, and the leafy part of the green onion to the pan.
Give it a few toss to mix everything evenly and we are done. This beef stir-fry
is packed with flavors. The beef is tender and juicy. The bell pepper is still
crisp and the mushroom is plump and flavorful. This is a very delicious and
nutritious dish and you can definitely make this at home. If you find today's
