Hello, everyone :)
Tonight, we're making braised pork belly with kimchi 🥩
I'll start by cutting the pork belly into pieces that are easy to grill.
Then, I'll season it lightly with salt and pepper before grilling.
Grilling the pork belly first when making kimchi stew
makes the outside crispy and enhances the flavor!
It also removes some of the excess fat,
so the kimchi stew won’t be too greasy and will taste cleaner :)
The remaining fat in the pork adds a rich flavor to the stew 🤤
Now, let's bring in the star of the show—kimchi!
Kimchi is rich in antioxidants like vitamin C,
which help prevent the fats in pork from oxidizing, making it good for your cardiovascular health.
Pork and kimchi not only taste great together but are also good for your health 🤤
Now, let’s make the spicy kimchi stew sauce! 🔥
What’s my mom up to?
60ml kimchi juice + soy sauce 2 + cooking wine 1 + red pepper powder + minced garlic2 Ginger powder + sugar1
The key is to make the sauce light so that the natural flavor of the kimchi stands out.
Using too much seasoning can make the sauce heavy and hard on your stomach,
so only use the minimum amount needed!
For the broth, I used vegetable broth (800ml) instead of water.
Bring it to a boil over high heat, then reduce to medium-low heat and simmer for about 40 minutes 🔥
While the kimchi stew is simmering, we'll make stuffed fried peppers.
For the stuffed peppers, it's best to use crunchy peppers like Korean green chili or mild green chili peppers.
Make a long slit down one side of each pepper and open it up to prepare them for stuffing.
Next, we'll prepare the stuffing for the peppers.
You can use a variety of ingredients for the stuffing,
but I've chosen to use vegetables that have a nice crunchy texture! :)
In addition to chives and carrots, you can also add chopped shrimp, mushrooms, or other ingredients to your liking 🥕
Since cutting glass noodles with a knife is tough, I switched to scissors ✂️
🥩 Ground meat + 1 tablespoon minced garlic + 2 tablespoons soy sauce + 1 tablespoon sesame oil + 0.5 tablespoon sugar + salt + pepper + ginger powder + egg + tofu + 1 tablespoon flour
It's like sensory play for adults ☁️ 🫧 🤍
Mix everything well, kneading it by hand, and your stuffing is ready!
Now, let's generously stuff the peppers.
I used large mild green chili peppers, which made stuffing them really easy.
Make sure to stuff them well so they don’t burst during frying.
These peppers are low in calories, making them great for diets,
and they’re rich in dietary fiber, which helps you feel full and manage your portions.
They’re also packed with vitamin C, 🍋
which boosts your immune system and is great for skin health.
For the batter, mix 1 part frying mix with 1 part ice water.
Make sure the batter is thick enough so it sticks well to the peppers :)
Ready to dip them in the oil 😎 💦
Into the oil they go
Keep the oil temperature high enough 🌡
so the peppers fry up crispy without absorbing too much oil.
But if the heat is too high, the outside may burn while the inside remains undercooked, so fry them over medium-low heat :)
Fry for about 3-4 minutes until the batter turns golden brown,
and you'll have delicious stuffed fried peppers ❤️🔥
Let’s plate them in my favorite dish.
Now, let’s slice some green onions to add to the well-simmered kimchi stew.
Adding green onions at the final stage gives a subtle aroma and sweetness to the dish.
I’m also adding some Cheongyang chili peppers for a bit of extra heat 🤤
Tofu is rich in plant-based protein,
so adding it to the kimchi stew boosts protein intake and makes the dish more filling.
Finish it off with green onions and chili peppers, and the kimchi stew is ready :)
I’ve been craving kimchi stew for days...
Kimchi stew is one of those dishes I need to have regularly.
And you know, the leftover sauce is perfect for making fried rice...💙
What’s the drink for today?
A bright red blood orange ade 🍊
It looked like everything had settled at the bottom, so I gave it a shake...
and the carbonation exploded 🚀
A comedy of errors
Blood oranges have a richer flavor than regular oranges,
with subtle notes of berries like raspberries or pomegranates.
Tonight’s hearty dinner is ready 🍚
Let’s start with a bite of the meat... I’m so excited.
Mmm~
It’s incredibly delicious.
The braised pork belly, crispy on the outside and tender inside, just melts in your mouth with the kimchi...
This is what you call a true "rice thief."
You can really taste the rich juices of the pork belly,
and with every bite, the savory flavor of the pork belly fills your mouth.
Lately, I’ve been obsessed with these stuffed fried peppers.
They’re crispy on the outside and spicy, with a moist and flavorful filling inside.
The pepper’s unique spiciness blends perfectly with the crispy batter... It’s so delicious (I’m moved) 🥹
Wrapping some kimchi around the pork and taking a bite—yum!
The rice just goes down so smoothly with this.
I highly recommend this combination for your dinner menu too 👍🏻
It was so delicious that I kept thinking about it...
So, I’m going to enjoy the rest slowly while watching some drama! 😍
After eating my fill, I came to the study with Hoochoo to help with digestion.
Mom, focus and work hard, no slacking off!
And keep your desk clean, too.
!!!!!!!!?
I’m watching you through the mirror, so do it right.
But, I think I look pretty handsome.
Why are you laughing at me?
Hmph.
Mom, hurry up and finish so we can go to bed.
This sweet little kitten always waits by my side until the editing is done.
That night, I ended the day editing with my little Hoochoo.
Good morning, everyone :)
Here we have some fresh chicken tenderloin.
For lunch today, I’m going to make a rice bowl using these chicken tenderloins 🍱
I’ll cut the tenderloins into bite-sized pieces and season them with salt, pepper, ginger powder, and cooking wine.
Seasoning them like this improves the texture and flavor during cooking.
Next, I’ll coat them with 2 tablespoons of starch.
The starch locks in the moisture, preventing the juices from escaping during cooking.
It also makes the surface of the tenderloins soft and sticky,
which helps the sauce or seasoning cling better to the meat!
And it helps the meat hold its shape while cooking :)
This way, you can cook it in a cleaner, prettier shape.
Add a bit of water, 2 tablespoons of minced garlic, 2 tablespoons of soy sauce, 2 tablespoons of oligosaccharide, and 1 tablespoon of yakiniku sauce (or oyster sauce).
Using yakiniku sauce makes it easy to create a sweet and savory braised chicken dish ❤️🔥
Now, let’s see what’s left in the fridge and make some side dishes.
This is the leftover filling from yesterday’s stuffed peppers.
You can use the leftover filling to make mini patties (donggeurangttaeng) 😋
Just add an egg and a bit of starch to revive the filling into patties.
These patties are delicious on their own,
but adding some cheese gives them an extra savory flavor, making them even more delicious.
You don’t even need to add extra seasoning because the cheese adds a natural saltiness.
The combination is perfect, and the stretchy texture makes them even more enjoyable.
I’ll grill some cheese alongside the patties to fill the empty spots 🧀
The cheese patties are perfectly golden and mouthwatering...🥹
Grilled cheese has such a soft and chewy texture...❤️🔥
Now, let’s carefully pack everything into the lunchbox.
I usually split my lunch into two servings, so I pack plenty of rice.
Sprinkling some seasoned seaweed flakes over fluffy white rice makes it even tastier :D
I’ll top it generously with the chicken tenderloins 🤍
The chicken tenderloins, simmered in soy sauce and yakiniku sauce, are soft and moist,
with a subtle garlic aroma that enhances the sweet and savory flavor, making them even more irresistible!
The chicken tenderloin rice bowl is ready >..<
I’ll let the patties cool a bit, then slice them into bite-sized pieces.
Just looking at these patties makes them look so appetizing.
I’ll also add the nicely grilled cheese.
Today, instead of fruit, I’ll pack some cucumber salad in the empty space of the lunchbox.
This cool and crunchy cucumber salad is a great substitute for fruit :)
After neatly packing it up,
🥒 I’ll season the cucumbers with a bit of salt, soy sauce, sugar, vinegar, sesame oil, and sesame seeds.
These seasoned cucumbers are crunchy, savory,
and make a refreshing side dish that’s perfect for summer, helping to stimulate your appetite!
I’ll add a lunchbox pick to make it easy to eat,
and today’s lunchbox is complete 🍱
A hearty lunchbox for a true rice lover.
One of the great things about packing your own lunch is that you can choose healthy ingredients
that suit your taste while also taking care of your health :)
I’m also packing some mayonnaise to drizzle over the chicken rice bowl,
and I’m bringing two waffle cookies to enjoy as dessert 🧇
I carefully wrap my precious lunchbox to make sure nothing leaks 🧣
Alright, everyone, I’m off for the day. Take care! :)
After work, it’s time to prepare dinner.
I need to use up this crown daisy today before it wilts 🥬
I also have a few mushrooms left 🤔
And I found some frozen crabs in the freezer.
Looks like I’ll be making crab soup tonight.
Even though they’re frozen, the crabs are pretty meaty.
I’ll pour in about 1 liter of water
and start by making a broth with a seafood stock packet.
I’ll also add plenty of radish to the broth.
Adding radish to the broth not only enhances its sweet and savory flavor,
but it also boosts the broth's nutritional value with vitamin C, calcium, and digestive enzymes.
Now, let’s prepare the ingredients that will go into the crab soup.
Green onions are a must when making any seafood soup.
Their strong aroma helps neutralize the seafood smell, making the broth taste clean and fresh.
Now, I’ll make a spicy seasoning sauce 🔥
red pepper powder3, anchovy fish sauce1, cooking wine3, minced garlic1, ginger powder, salt 0.5, stock powder0.5, doenjang (fermented soybean paste)1,beef bone powder0.5
Adding beef bone powder to the seasoning gives the crab soup a rich and deep umami flavor.
The beef bone powder blends well with the seafood, enhancing the overall taste.
Remove the well-steeped seafood stock packet 🦐
and add the spicy seasoning sauce.
When the broth comes to a boil, add the frozen crabs 🦀
The natural sweetness from the crabs and the umami from the seafood infuse into the broth,
creating a refreshing and clean-tasting crab soup.
After boiling for about 10 minutes,
add the frozen seafood mix (squid, shrimp, mussels, etc.) 🦪
Since we’re adding various seafood and vegetables to the crabs,
the broth develops a deep and harmonious flavor.
Finish off with the wilting crown daisy
and some bean sprouts, and the crab soup is ready ❤️🔥
I’ll quickly make some leftover vegetable pancakes to go with it.
I need to use up the leftover chives and cabbage,
so I’ll make a chive and cabbage pancake 🧐
When making cabbage pancakes, if the batter is too thick, it can overpower the taste of the cabbage,
so it’s important to keep the batter light and thin ⭐️
Adding an egg will give the pancake a richer, more savory flavor 🐣
- I thought it might be good to add some peppers to the pancake,
so I went to the fridge to grab some.
- But let me tell you how long these peppers are...
- They’re literally the length of this dish! ㅎㅋ
(Wow, it’s seriously as long as my pants…)
(It was so impressive, I almost didn’t want to eat it.)
But despite that, I ruthlessly cut it up with scissors ✂️
I’ll add plenty of oil and fry it until it’s nice and golden!
And in the empty space, I’ll crack an egg 🍳
Flip it over when the edges of the pancake start to dry.
The pancake looked a bit plain, so I added some red chili for color 🌶️
Once it’s golden on both sides, my cute heart-shaped cabbage pancake is ready.
Let’s place it nicely on a plate.
This is a super simple leftover vegetable pancake.
The perfectly cooked egg goes right on top of the rice.
The ultimate "rice thieves" collection.
This side dish is ‘stir-fried sweet potato stems’ that my mom gave me,
which was one of my favorite side dishes when I was in high school 🤤
I’ll also serve some of the crab soup that’s been simmering.
Crabs are rich in taurine, an amino acid that’s great for relieving fatigue and improving liver function :)
Crab soup is my go-to comfort food when I’m feeling stressed and tired… 🦀
This tray is way too small for all this…
*sigh*...
On my way to the dining table, I run into my little kitty.
😺Mommy~
😺I smell crab... Is that our snack?
😺I’ve been waiting so patiently.
😺Please give me a treat.
My little kitty Hoochoo just wants to play with mom.
He’s been following me around, protesting for some playtime.
My heart can’t take this level of cuteness.
Hoochoo~?
😺Did you call me?
😺I’m right here too, you know.
These sweet little kitties are waiting so patiently.
😺Mom, please pet me.
😺Do you know how long I’ve been waiting?
A day full of joy and contentment for this cat mom, even without eating… 🥹
After playing with the kittens, I’ll enjoy dinner while watching the Olympics.
Crab soup is the ultimate "rice thief." 🍚
Husband: Wow, this is amazing~
Husband: How can it be this perfectly spicy?
It must have suited his taste because he finished the whole bowl in no time :)
When he enjoys the food so much, it really makes cooking worthwhile 👩🏻🍳
- I used the heart-shaped frying pan you bought me.
Did I buy that?
- Yes.
Hmm~
- You took me to the dish market and bought it for me~
Hmm~ Did I buy that for you...?
Ah~😮???? The dish market?
Ah~???? The day I got hit on the head?
My true colors are about to be exposed
Trying desperately to recover the situation
Ah, that day when~
I got a "love tap" from you?
That day, right~~~🤨?
(It was just a playful tap on the head...)
Let’s focus back on the meal...
I highly recommend this spicy yet refreshing crab soup for your dinner ❤️🔥
Thank you for the meal today, it was delicious :)
Today, as soon as I woke up, I started wandering around the kitchen.
I found a baguette in the freezer.
Hop!
It looks kind of like the dried pollack I eat.
Since it's a frozen baguette, I’ll let it thaw at room temperature for a while.
I also bought some gravlax salmon for sandwiches.
Gravlax is salmon that’s been cured with salt, sugar, and herbs.
And you can’t forget avocado for a sandwich 🥑
Avocados are rich in healthy unsaturated fats,
which help lower blood cholesterol levels and improve heart health.
Plus, they’re low in carbs and high in healthy fats, making them great for blood sugar control.
The soft, creamy texture of avocado pairs perfectly with eggs.
Avocados are rich in healthy unsaturated fats, and eggs are high in protein,
so when you eat them together (protein and fat), it helps you feel full longer,
and the energy is released slowly, keeping you energized throughout the day 💪🏻
Once the baguette is thawed, I’ll cut it in half 🥖
and toast it until it’s nice and crispy :)
Ding!
The bread pops up shyly.
I’ll let the baguette cool on a plate for a bit to prevent the ingredients from getting soggy.
Once the bread has cooled slightly, I’ll spread on plenty of cream cheese or yogurt.
It’s also tasty if you mix in a bit of whole grain mustard :)
Choose your sandwich ingredients according to your preference.
Adding arugula or lettuce makes it even tastier 🥬
Avocado in place 🥑
Gravlax salmon is slightly saltier and sweeter than regular salmon,
and it has a fresh and deep flavor with the fragrant aroma of dill.
Finish it off with some cute little greens rolling around, and your salmon sandwich is ready.
What’s the drink for today?!?
A refreshing iced latte with lots of ice ☕️
Ready to enjoy brunch >..<
I’m going to dig in, it looks so delicious 🤤💙
Can someone please teach me how to eat an open sandwich neatly?
Half of it ends up spilling while I eat ㅠ
Skipping the fork and knife, I’m eating with my hands... I’m too hungry to care ㅋ
Is it really brunch if I’m just grabbing it with my hands?
Washing it down with a cold latte ㅋ
On to the second sandwich—straight into my mouth.
After eating to my heart’s content, I spent a relaxing afternoon with my kitten,
and later, I went out for a late lunch with my husband to grab some burgers.
The burgers looked absolutely amazing…
I didn’t used to like burgers much,
but now they’ve become my soul food (I wonder how many soul foods I have).
At What The Burger, they serve chicken as a side instead of fries.
The chicken was so tender it just melted in my mouth 🥹
I usually eat lunch alone, but it felt so much better eating with my husband.
We spent time together, talked through a lot of concerns,
and I got some advice on things that are hard to discuss with others.
It feels like we’ve grown closer and stronger than even when we were dating.
It was a happy weekend, eating delicious burgers with my husband.
That’s it for the video I prepared for you all :)
Thank you for watching today’s video! The weather’s been really hot lately, so make sure to stay hydrated! Take care of your health while you work 💪🏻👩🏻🌾 Thank you as always for your support. I hope you all have a peaceful and happy August. I’ll see you in the next video. Bye ❤️🔥
