time now for the dish and we're talking
about a summertime classic Mexican
street corn it is fresh cheesy Tangy and
it star is one of The Season's most
glorious local veggies to find out how
to make it quickly easily and with just
four ingredients I had to LA pl's Food
Truck at Cherry Street
Pier laita in Spanish is just a small
square it means small square where
people meet and Mingle and at her laita
food truck mariangeli Alisa is bringing
a Puerto Rican Pastime to Cherry Street
Pier Chino Chino her food truck is just
up the Pier from her husband's Chef
dionio
jenez together they own the James Beard
nominated Cantina La Martina in
Kensington he's from Mexico she's from
PTO Rico and they're each bringing their
own flavors to the pier so you each have
your own food truck here
yeah I love it and we're comparing
throughout the day like canita is doing
better plita is doing better so a little
competition not today we're making
Mexican street corn and this looks
really simple it's very simple in fact
it has just four ingredients starting
with the corn so the corn has already
been boiled with a little bit of water
and salt and once you get it to the
tenderness that you like the corn is so
beautiful right now yes yes okay so just
boil the corn as you would and then you
take the sck this this is where we turn
it into a party right that stick also
comes in handy on the grill just pop it
on and turn it to get a Char on all
sides step two make or buy a Chipotle
mayo and you're just going to take the
brush and cover it because the Chipotle
mayo is what makes the queso fresco
stick on the corn yes got it queso
fresco that's the third ingredient it's
a semi- soft Fresh Mexican cheese and
the queso fresco you said you make sure
it's really super crumbly you can buy it
already crumbled or you can buy the
whole wheel and then just crumble it you
can also use the grater and grade it and
be very generous with it oh yeah pack it
in pack it on yes yes extra look at that
gorgeous the final touch tahim a Mexican
seasoning blend of Chili's lime and sea
salt and you can put as much tahen as
you want that adds a little bit of um
citrusy to it spicy a little kick yeah
okay all that's left to do is enjoy this
is a party it's a
fiestaa cheers O Yay this is my kind of
party we need a margarita from next door
two please
