Homemade Soy Yogurt with No Thickener

Nut Milk

Welcome back everyone.
Today I've got a dairy-free yogurt recipe for you using the Lavelli Vibe Blender and
the Pure Plus Yogurt Maker.
We're going to make a soy-based yogurt with no added thickener.
It's really simple and a good one to put in your repertoire.
Before you start, make sure that all of your equipment is properly sterilized.
There's a little bit of preparation required for this one and it's just about soaking your
soybeans overnight so that they rehydrate and activate.
So I've had one cup of soybeans soaking in room temperature water overnight and that's
done the job.
Now, all I need to do is strain and rinse them and get them into the Vibe Blender.
Add your soaked beans to the Vibe Blender jug with three cups of filtered water.
Blend on smoothie mode for around 40 to 60 seconds.
Pass the mixture through a nut milk bag straight into a pot.
Squeeze and twist the bag until all of the liquid drains through.
Discard or compost the leftover soy pulp.
Soybeans can't be eaten raw, so this next step of cooking the soy milk is essential.
Add another five cups of filtered water to the pot and gently simmer the milk for 15
minutes.
Keep a close eye on this as it comes to the boil and make sure that you give it a whisk
occasionally.
While it heats, skim off the foam that starts to float on top.
After 15 minutes, remove it from the stovetop and let it cool down in the pot.
Then remove the skin that forms on the top.
Once the milk has cooled down to below 42 degrees Celsius or 108 degrees Fahrenheit,
pour it into a sterile yogurt making jar.
Add one teaspoon of sugar and your preferred starter culture and gently whisk it through.
Place the yogurt jar into the base of the yogurt maker and pour water into the base
up to the tall line indicator.
Place the cover on and use the digital control panel to set the temperature to 38 degrees
Celsius or 100 degrees Fahrenheit and the time to 15 hours.
Don't forget to hit confirm.
After 15 hours, remove the yogurt jar and place it into the fridge to set for at least
six hours.
As you can see, the consistency is really nice and thick.
However, if you want it to be a little more creamy and smooth, then give it a really good
whisk and that should do the trick.
So there you go, another plant-based homemade yogurt recipe.
This one's dairy-free, but it's also nut-free and there's no added thickener.
