Hi there! 🥰 Let's make breakfast-style restaurant hash browns at home with only 3 ingredients!
1 Medium potato ~ 200g. I use Yukon potato. It's perfect if you have a russet potato. You can also use a red potato if you want. Don't use waxy potato for this dish; it doesn't work that well.
Peel the potato then shred it
Put the shredded potatoes in a bowl filled with water. Then rinse until the water is clear. This will remove some of the starch from the potatoes and maintain good color in the browns
Then drain and squeeze dry. Squeeze the shreds lightly to remove water from them without destroying their shape.
Sprinkle them over a towel/paper towel
Soak up moisture as much as possible to remove any remaining moisture from the potatoes
I want more crispy so I let air dry for about 10-15 minutes before cooking
2 Eggs. Beat the eggs in a bowl, and whisk until the yolk and whites are thoroughly combined
Just a few simple ingredients to create a delicious and healthy breakfast. Watch the video until the end so you don't miss any steps to make crispy hashbrowns. A secret 🤫
Bacon - 3 strips. Lay the bacon out flat in a cold pan.
Add a little bit of water and set over medium heat. You want just enough water to just cover it.
Boil until the water reduces completely
Your bacon will start to crisp up. Once the underside has some color on it, flip over
Cook for 1-3 mins on each side. I flip it another once or twice so both sides have even color. Turn down the heat if you feel it’s cooking too fast.
Take it out and place it on a paper towel or wire rack.
Add 10g Unsalted butter and cooking oil into the pan
Heat pan on medium-high heat and melt butter
Place potatoes into the pan
Spread a nice even layer
Cover and cook for 4-5 minutes
Meanwhile, let's make scrambled eggs. Melt 10g butter in a nonstick pan
Pour in the egg mixture, and let it cook for 5-10 seconds
Then make it like this. Start leisurely running a rubber spatula or flat edge wooden spoon in long strokes back and forth across the pan and around the edges. This technique pushes the cooked egg off the base and piles them up (which creates those beautiful soft curds you see) and lets the raw egg spread out into the pan to cook
Continue cooking over medium-low heat, folding and stirring the eggs constantly. As you work, make sure to scrape your spatula along the bottom and sides of the pan to continue to form curds and to prevent any part of the eggs from drying out.
Salt and black pepper to taste
A little bit of butter (Optional)
Keep going with hash brown
After 5 minutes, remove the lid, season with salt and black pepper
Then flip over and brown on the other side. Cook the other side until brown and crispy.
Add cooking or butter to crispy (if needed)
We done! Plate them up! Serve hot and enjoy!!
