Welcome to Japanese Cooking Ichie.
Today I will teach you how to make yakisoba.
Yakisoba is a popular Japanese dish that is enjoyed as a street food alongside takoyaki.
It's easy and very delicious so be sure to give it a try.

Now let's get started.
First let's introduce the ingredients.
150g of yakisoba noodles, 80g of thinly sliced pork belly, 100g of cabbage.
25g of garlic chives, 1 half onion.
These 4 seasonings.
Also if you prefer, you can have toppings such as aonori, beni shoga and katsuobushi.
Let's move on to the preparation of the ingredients.
First let's cut the cabbage.
Since we want to enjoy the texture, we'll chop it roughly.
When doing this, please cut the core of the cabbage thinly as it is hard.
Once you have cut it like this, it's good.
Let's transfer it to a plate.
Next let's cut the garlic chives.
Please cut them to a width of about 3-4cm.
Once they are at this length, it's good.
Next let's finely slice the onion to about 0.5mm.
Since we want to keep the texture of the onion, please cut it to this thickness.
Be careful not to cut it too thick as onions are a vegetable that takes longer to cook.
With this, the preparation of the vegetables is complete.
Finally let's cut the pork.
Please cut the pork into bite size pieces like this.
Once you've finished cutting, we'll season it.
Sprinkle a pinch of salt and a pinch of pepper over the pork.
Next knead the pork well until the salt and pepper are evenly distributed and then the
preparation is complete.
Now let's start cooking.
Add 2 teaspoons of oil.
Turn on the heat to medium and first let's fry the yakisoba noodles.
The reason for frying the yakisoba noodles is to give them a nice roasted flavor.
This is also the secret to the deliciousness of Japanese street vendor yakisoba.
We want to ensure the noodles get a good sear, so occasionally press down on them with a
spatula like this.
After frying for about 2-3 minutes, let's flip them over.
This level of sear is just right.
Cook the other side in the same way by pressing down with the spatula.
Flip them over again and once you've confirmed that they have a nice sear, the noodles are
ready.
Remove them to a plate for now.
Now add 2 teaspoons of oil to the empty frying pan again and let's fry the pork.
Please make sure to cook everything from this point on over medium heat.
Fry the pork until it has a nice sear.
Once the pork has this level of sear all over, it's time to add the vegetables.
First let's fry the onion.
To prevent undercooking, it's recommended to fry the vegetables in the order of those
that take longer to cook.
If you're using carrots, be sure to fry them before the onion.
After frying the onion for about 1 minute, it will become cooked and some parts will
turn translucent like this.
Before it becomes too soft and wilted, let's add the cabbage and continue frying.
While cooking the cabbage, make sure to mix the ingredients well so that the cabbage is
coated with the flavorful oil from the pork.
After about 2 minutes of cooking, you will see that the cabbage is coated in the oil,
becoming glossy and has a nice sear in some places.
When it reaches this state, let's add the yakisoba noodles.
First use chopsticks to thoroughly separate the yakisoba noodles.
It's good once the noodles are loosened like this.
Now let's add 1 tablespoon each of Worcestershire sauce and oyster sauce.
Using these two sauces will create a rich and delicious flavor.
Please mix everything well so that the sauces coat the entire dish.
Once the sauce is mixed throughout like this, add the garlic chives and continue frying.
Garlic chives cook very quickly so they don't need to be fried for long.
However, if you don't cook them enough, they can retain their spiciness, so adjust the
cooking time according to your preference.
I personally recommend frying them for about 1 minute, leaving a nice texture while ensuring
the spiciness cooks off.
With that, the cooking is complete.
Let's move on to plating.
Today we will plate the dish on this beautiful blue plate.
First place the noodles on the plate and then top them with the ingredients to make it look
even more appetizing.
Finally, let's add the toppings.
Sprinkle aonori over the entire dish and garnish with katsuobushi and benishoga.
This is an extra tip, but if you want to make it more like a Japanese street food style,
I recommend adding a fried egg on the side and that's it.
It's complete.
A fragrant aroma is drifting and it is very appetizing.
It looks so delicious.
Now let's dig in.
First, I recommend enjoying it simply with the pickled ginger.
The rich sauce infused with the flavor of the pork clings well to the noodles, making
it very delicious.
Next, let's break the egg yolk and mix it with the noodles as we eat.
The creaminess of the egg adds to the experience, making it fantastic in its own right.
If you want to enjoy the taste of Japanese street food at home, be sure to give this
a try.
