Tender ground beef, seasoned with thyme and mustard, meets a creamy sauce with fresh lemon, green olives, and herbs—simply irresistible!
📋 INGREDIENTS:
For the meatballs:
• 500 g ground beef (1.1 lbs)
• 1 small onion, finely chopped
• 1 clove of garlic
• 1 egg (size M)
• 3 tbsp breadcrumbs
• 1 tsp mustard
• ½ tsp dried thyme
• Salt and pepper to taste
• Olive oil for frying

For the lemon olive sauce:
• 2 tbsp olive oil
• 1 small onion, finely chopped
• 1 garlic clove, finely chopped
• 250 ml vegetable broth (1 cup)
• 150 ml cream (⅔ cup)
• Juice and grated peel of 1 organic lemon
• 1 tsp cornstarch, mixed with a little water
• 80 g green olives (approx. ½ cup)
• Fresh parsley or dill for sprinkling
• Salt and pepper to taste
