Now let's start by cutting our pork. I have with me over here 220 grams of pork tenderloin. If you
cannot get pork tenderloin or you'd like a little bit of fatty cut, you can go for shoulder butt.
Sirloin also possible. Loin meat also possible. It's really up to you but this is really tender.
So when you want to cut this, remember to cut it across the grain. This is the grain,
so we cut it this way. Slice it thinly because we are going to do a faster fry on this.
So something like this will be good. Alright, thinly sliced. Okay, continue to cut the rest
and I'll show you the next step after this. Now we start to season our pork. Add in a few
dashes of white pepper, 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce,
1 teaspoon of dark soy sauce, 1 teaspoon of sugar, 1 tablespoon of Chinese hua tiao jiu
or Chinese cooking wine and 20 milliliters of water.
Mix them up well using your hand. Of course, clean your hand first.
Mix them up well until the water is absorbed well by the pork like this. Next, add in 2
tablespoons of corn flour. This will help to tenderize the pork also. Mix them up well together
too. Next, we'll add in 1 tablespoon of sesame oil. This will give this dish a very nice sesame
flavor as well as later when we cook the pork, it's easier to separate them. Mix it up well.
Once you're done with this, just leave it aside for 10 minutes before we cook them.
I'll see you back in a while. Now we start to put our dish together. Using medium heat,
heat up your wok. Add in 2 tablespoons of sesame oil. Add in about 20 grams of young ginger julienne.
Put everything in. We don't have to wait until the oil is hot.
The stalk of 3 spring onion, cut into halves like this. Put everything in. We fry them until
fragrant. This dish is very easy to put together and it's extremely, extremely good with rice.
We'll fry them until we can smell them. Smelling really, really, really good.
Once the flavor is out, we'll add in garlic. 5 cloves of garlic, chopped. Put everything in.
Mix them up well. Almost immediately, you can smell the beautiful fragrance that's coming out
of this wok. Really, really nice. Once they have started to brown a little, we'll add in our pork.
Pour everything in. Spread them out and mix them up. We'll fry them for about a minute or two
before we add in some water. Using your spatula, just separate out the pork. I've julienned my
ginger so that the flavor will be more pronounced. But if you do not want to bite into ginger,
you can always slice it. We'll fry the pork until we no longer see any redness.
I'm still using medium heat. You can do the same. Okay, once it's fried like this without
much of a redness, we'll add in water. Add in 100 milliliters of water.
Deglaze the pan a little bit. We've sliced the pork very thinly. That's why it's
very easily cooked. If the gravy is a little bit too thick for your liking,
just add a little bit more water. It's fine. Mix them up really, really well.
Oh, this is going to be so good. Now we add in the rest of our spring onions.
Give it a good stir again and then just splash one tablespoon of Shaoxing Huadiaojiu.
Mix them up again. Very fast, very easy, very delicious. Excellent with rice.
Okay, now that our dish is done, we'll have our lunch.
And now the dish is done, let's have a taste. I love the beautiful smell from the sesame oil,
the ginger. This is going to be so good. Big mouthful of this with some rice.
Pork is tender. The sauce is very flavorful. Pairs very well with steamed rice. You've got to try
this. So ladies and gentlemen, I hope you like our video. Do click like on our video and do subscribe
