Welcome to Grill & Smoke BBQ. I'm Jeffrey. Today, we're going to be doing some pork tenderloins
and we're going to be using some Uncle Steve's Shake along with some Hazel's Hot BBQ Sauce.
Let's do this. Alright, so what we have here, two pork tenderloins.
There, the moisture on it is already good, so I'm not gonna worry about using a binder.
So, what I'm gonna do first is I'm gonna use some of this Uncle Steve's Gator Shake
and that'll be my base layer for these. Now, if you haven't had Uncle Steve's before,
this is some awesome stuff. Uncle Steve's is my favorite rub to use right now
and he has several different types. So far, I like them all. He has a new one,
the Sweet & Spicy R. I've yet to try that, but I will as soon as I get a chance.
And you just pat it in. Of course, you know you don't want to rub your rubs in
because then it might clump up and then you have like a whole bunch of
rub here and be none over here. So, just pat it in.
And what I'm gonna do now is I'm gonna come over the top of that with some Uncle Steve's Spicy R.
And this one and the Gator Shake are my two favorites of the ones that he has.
I'm just gonna pat that in as well and we'll flip it over, do the same thing to the other side.
First with the Gator Shake. I did do some slight trimming on these to get some of that
silver skin and the fat off, but I didn't need too much trimming. And of course, back over the top
Today, we'll be doing these at, we'll do 250. Judging by the size of these,
probably take about an hour and a half at the most, two hours. I won't even say two hours,
should take about an hour and a half to get these up to about 145. That's gonna be the target
temperature. All right, catch you at the pit balls. All right, let's get ready to put these
on. I'm using the Pit Balls Competition Blend wood pellets.
I say we're gonna be doing this at 250. We'll come back and check on this in about 30 minutes,
maybe an hour. All right, here we go. Been at it for an hour. Let's see what our temps are like.
130 to the floor, about 130 on the back. So what I'm gonna do right now,
Come back down, probably go in and glaze it with the
Hazel's barbecue sauce, because I only want to get them up to about 145.
So we should be good in about 30 more minutes. All right, it's been 15 minutes. Let's go ahead
come back down in 15 minutes. Okay, so I've been letting these rest for the past 15 minutes.
Take a look at it. Looks good. But let's crack into it, see what it's like as far as the juiciness.
I'm gonna do this bigger one. Look at it, just dripping everywhere.
So let's go ahead and cut it down the middle and get that. Yeah, see that juice?
Gotta catch it before it hits the floor.
Yep, juicy as it want to be. Still a great color in the middle. Oops, I missed it, didn't I?
Still a great color. I'm gonna get some slices and then I'm gonna taste it.
Okay, let's take one. Look at it, just bends over. Ah, you can't see it. I have to fix the
angle of this camera. But as you can see, tender as it want to be, just bends right over.
So let's taste it. Here we go. Look at that, just pulls right apart.
Man, that Uncle Steve shake is killer with this Hazel's Barbecue Hot.
I'm sorry, hold on.
Man, this was some awesome tenderloin.
I don't know what to say, man. It's that good. Oh man, the heat right at the end
with that hot barbecue sauce plus that spicy R, it's just incredible. Absolutely incredible.
And the gator shake, get mad. I'm not gonna tell you, you have to try it yourself.
Get you some gator shake. Get you some spicy R. Get you some Hazel's Hot Barbecue Sauce.
Put it on anything. Awesome this way not. So thank you for joining me today.
