So, I thought I would share some of my
fall oatmeal cake and cookie recipe
experiments because we had some good
results. Did you like daddy's oatmeal
cakes this summer? This fall? You did?
Good.
Um, this is Anastasia with me. Um, so
some key tips that I learned. Uh first
of all
um grind half of the oatmeal in a coffee
grinder
and leave the other hole. And that will
give you some uh that uh turning the
oatmeal into flour will allow you to
make a good sponge that will rise
nicely.
And the other um whole oat flakes will
create some texture to the bread. All
right, second tip. Add a teaspoon of
corn starch
to the oatmeal cake and that will uh
help keep it moist. And I think that's a
great idea for any
um baking project.
What do you think, Tupi?
>> Great.
>> All right. Um
next tip. I like to make a meringue. I
put a ton of eggs in my oatmeal cakes
and the reason for that um is that
increases the protein in the oatmeal
cake and makes it a more nutritious
meal. So I put five eggs in my oatmeal
cake batter, which is basically a you
know a half casserole. Oh, you dropped
your shoe. Which is basically a half
casserole.
And
um and so five eggs is a lot for that.
Uh and what I did is I separated the
yolks from the egg whites
and that uh and then made the egg whites
into a meringue. The meringue is a great
idea
uh because it gives a really good rise
to the oatmeal cake.
All right. So, corn starch, lots of
eggs, make the whites into a meringue,
and then um
I like to garnish it with some pecans.
Again, giving some more texture
variation and uh and also some more
protein and uh and nutritional variety
to it. Uh on one occasion I chopped up
some apples and put that in the batter
and that helped uh retain a lot of
moisture. On another example I put in
about a cup of sour cream and that
helped it stay moist and the sourness uh
has a good effect of keeping it moist. I
put a lot of cinnamon in my oatmeal cake
and uh and that uh and then and in one
example I melted some butter, mixed it
with sugar and uh cinnamon and kind of
folded that in almost to get a cinnamon
bun spiral effect and that worked out uh
really well. So those are some options
for gluten-free oatmeal uh cake uh
baking. experiment with it on your own.
Some cloves might help, pumpkin spice,
uh ginger, uh think of various different
uh combinations there. Uh and that uh
and happy baking.
>> Happy baking.
