So picture this. It's been a busy day and you're headed home for the night.
You want a home-cooked meal, but you really want that minimal cleanup.
I think I got you.
And that's where this comes in.
A one-pot creamy sweet potatoes and lentils.
It's fast, nutritious, packed with flavor, and honestly,
it might just become your new weeknight go-to dinner.
Let's talk about what we're gonna need.
We have eight main ingredients and everything else is seasonings.
Kale, sweet potatoes, cilantro, lemon, cooked lentils,
olive oil, cashew cream, and vegetable stock.
On our cutting board, we're starting with our kale.
You only need a few stems and you're pretty much just stripping the leaves.
Stems could go in the compost or turn them around and make a solid smoothie.
These are easy to sneak into like the kids' smoothies.
Just pair it with some of the sweet stuff.
Mangoes, pineapples, you know what I'm talking about.
They pretty much won't even notice it's there.
Then again, if it turns green, you may have some splitting to do.
Moving on to our sweet potatoes.
Dice the sweet potatoes into roughly, I would say about a half inch cubes or smaller.
The goal is to have this meal on the table within the next 20 to 30 minutes.
So the smaller they are, the quicker they'll cook.
Now for our cilantro.
I meant pretend parsley.
Yeah.
Get out your pretend parsley.
Give these a quick chop, set them aside for later.
They're totally optional, but I do like how it finishes the dish.
And we're also going to tuck a lemon into the side here.
We're going to be using it closer to the end.
Moving on to setting up our spice mixture.
In a small bowl, we're adding oregano, garlic powder, onion powder, black pepper, salt,
ground coriander, ground cinnamon, and ground nutmeg.
I do also happen to sprinkle some flakes in here too.
The red pepper flakes, I actually just do a teeny bit.
The whole idea here is to wake up the dish.
We don't want enough that you could really taste it or, you know, catch anybody's mouth on fire.
Whisk that all together and set it aside.
This blend is savory, a little sweet, warm from the cinnamon and nutmeg.
And again, that hint of heat will just wake things up.
Think of it as your favorite hoodie.
You know, the one you pick when you want to warm things up just enough.
All right, let's bring out the skillet.
And over medium heat, add some olive oil.
We're going to start in the skillet with our cubed sweet potatoes.
And we're going to cook that for just about five, maybe even six minutes.
Flipping them every one to one and a half minutes.
This part's important.
We're finding the balance between, you know, cooking the outside perfectly
while not trying to overcook the inside.
The whole point of this isn't because we want them crispy.
We just want to caramelize the outside for some additional flavor.
So this balance is kind of like a, you know, a good friendship.
A little patience, a little time, and everything's going to turn out golden.
Now, add in your spice blend.
Stir it in and let it toast with the potatoes for just about one minute.
Toasting the spices directly with the potatoes does two things.
It brings out all of their oils, which is pretty much where all of the flavor lives.
And it makes your kitchen smell amazing,
which inherently might cause a third thing.
Everyone to flood the kitchen.
All right.
So now we're bringing in our veggie stock.
Pour it in and make sure to scrape the bottom of the skillet
to loosen up all that caramelized flavor.
I can't say it enough.
All of the stuff stuck at the bottom of the skillet, it's called fond.
And that's literally where all of the flavor lives.
Next, stir in your cashew cream.
This is what gives us that creamy, rich texture without any dairy.
Using a thick plant-based milk like coconut milk or oat milk would also be some good options.
If you wanted another protein option, you could do something like silken tofu.
And similar to cashew cream, we get more protein into the dish.
Let's add in our cooked lentils and toss in our kale.
Lentils are a great part of this dish,
but you could also do something else that's also budget-friendly,
packed with protein, and makes dishes like this super satisfying.
Chickpeas, butter beans, anything like that that's in a can
or something you already meal prepped would help you get this dish to the table super quick.
Okay, zest your lemon right into the skillet.
Then slice it and squeeze in the juices.
I like to do half at first, then give it a taste right after stirring it all together.
Finally, top it with shallot, pretend parsley, and boom, there you have it.
I just love serving this with crusty bread.
Or I make some quinoa and dump it right on top.
That also helps stretch the meal just a bit further.
Especially on those days that meal prep looks like the way to go.

This particular recipe, I simply cut it in half to show you that you can make it for yourself too.
