So, it's 30 degrees outside.
Good thing I've got the heated steering wheel
on the Dodge Durango.
And it's a sandwich show,
so why not head west on Madison
and find a place that says sandwich shop?
Put me an egg on the skillet, please.
The Palace Grill on Madison is not to be confused
with another Chicago Palace diner.
It is just what the sign says, a sandwich shop.
Pull me out the tuna, please.
But unlike any other, the key ingredient here is
George. George.
George Lamperez.
The owner himself.
He comes around and he says hi to everyone.
Bursting.
What personality.
He's just got the best personality.
George. Yeah.
So magnetic, makes you feel so welcome.
Everyone's friendly.
It's a good atmosphere.
Read the sign.
If our food, drink, and service aren't up to your standards,
please lower your standards.
Sandwiches.
You got a ton of them, so just go.
Breakfast sandwiches.
We can put it on wheat bread, rye bread, French bread.
Our skirt steak sandwich is phenomenal.
Our Reuben sandwich is phenomenal.
We have a great tuna melt.
We have a great patty melt.
Aha.
Got an excellent patty melt.
Stop right there.
That's where we're going.
To fat you up, we're gonna make you a half pound patty melt.
And because I'm a little bit large,
we'll make myself a smaller portion.
You're not large, you're husky.
Absolutely. Let's do it.
Let's do it.
All right, where's the beef?
Fresh, not frozen.
Every morning.
You gotta season it.
There's about 15 different spices in there.
Ted, how would you like your jumbo
half pound patty melt cooked?
Medium, you know, warm, pink in the middle.
Pink in the middle, you got it.
Grilled onions, let's put them on.
I don't like raw onions, but I do love grilled onions.
We should go put our bread on the grill.
Simultaneously cook that.
When that's ready, we can just put it right on the bun.
Oh, simpatico.
American cheese, which is right behind you.
Got it.
What are we having with this, fries?
French fries.
Or a fruit plate.
Put our fries down.
Maybe you should get a fruit plate.
Nah, that ain't happening.
He's looking out for his health.
Nah, I'm out here.
And like George, the customers
are not counting their calories.
You want fruit?
Say strawberries.
Strawberries.
Nice work.
How about a strawberry shake?
It's the classic Chicago comfort food
that people want and expect when they visit the palace.
I love it, it's delicious.
You gotta have that crusty bread, patty melt.
Gotta love that.
Working my way through the menu.
Yeah, hopefully one day at a time, not today.
I had a grilled cheese sandwich.
How was that?
It was amazing.
Was it better than mom's sandwich?
This is better.
I'm gonna gain at least five pounds
every time I come in here.
Probably.
This place has been a mainstay
for 75 years in this location.
You're doing something right.
What's the secret?
I have three rules in business.
Rule number one, take care of the customers.
Rule number two, take care of the customers.
Rule number three, take care of the customers.
That's all there is.
You're not mad that I had you make the smaller one, right?
I'm worried about you.
Thanks.
Cheers.
Come on.
Rule number four.
All right, cheers.
Salute.
That beef, no fillers added.
Straight on, great ground beef.
Every bite, you get a little bit of everything in it.
This is a great sandwich.
I don't know why the heck we haven't had a patty melt on,
but I'm glad we waited for here.
Well, thank you.
It says sandwich shop for a reason.
They've been doing it for 75 years.
You think you've got a better spot
with a more eclectic mix of sandwiches?
I don't know, do they?
I don't think so.
Let us know if you got a spot you want us to go to.

Go Hawks.
Let's go Hawks.
All right.
