I want to ask y'all something. Would you have any idea what I've got on my mind
seeing what I'm wearing? Well, you'd be right. It's about Valentine's Day.
And I'm not feeling very Valentine's-y today, y'all. I have bent Eddie and Teresa's ears
till they about fall off. You know, just one of them little bitchin' days, like you say.
It's not Monday, but it feels like a Monday, doesn't it? I think I'm just,
after the holiday season, you know, it's kind of a letdown, isn't it?
I hope I'm not the only one that feels this way. No, you're not at all.
Okay. So for Valentine's Day, I may have this on for the next three or four
videos. So I got to try to keep it clean. So I got a note from Denise Madjah.
I'm so sorry, Denise. But her last name is M-A-D-A-J. And I would pronounce that Mad-A-J.
I think I missed phonics in school. But anyway, she sent me a note saying that her favorite
recipe of her mom's was an Italian chicken. And she said, I'd love for you to try it and
see if you like it as much as I do and my family. So I got to thinking this would,
for an Italian Valentine's meal, you know, this might be right up some people's alley.
And good Italian food, you can get real romantical over some good Italian food, can't you?
In fact, I need to make chicken parmesan one day. Remind me, Teresa.
I will. I love chicken parmesan.
I do too. I do too. So we're going to start with like a soup size pot. And Denise tells me to
put two large cans of tomato sauce. And I'm going to get every drop out. And I've got four
chicken breasts. And Denise said skin and bone on. Because, you know, the flavor is in that skin and
in those bones. She only tells us to use one or two. One or two breasts. Okay, so it's going to
be a heavy pasta then, right? I think I may use more than, I think I may use more than one or two
breasts because I got mouths to feed. All right, now I'm going to, what, how much was that? Four
cups? Three cups. Three cups of tomato juice. So this is going to be nice and, nice and tomatoey.
All right, now I'm going to add my spices. And this is dried crushed garlic.
And there's a good bit of that, which is going to make it very, very good. I'm going to add a fourth
of a cup of shredded parmesan cheese. I'm going to add about one teaspoon of Italian seasoning.
And then I'm going to add oregano. So I might, the only thing I might do differently, Denise, is
maybe add a little bit more Italian seasoning. But I'm going to taste it and I may not need it at all.
So I'm going to take my chicken breasts. I'll move that to a bigger eye. And let's see. One of these
breasts doesn't have any skin on it. So, and these are big breasts, aren't they? Big. I can see why
she would say just use one or two. So, because we're actually going to shred this after it's done.
But we're going to cook it for about an hour and let it cool. And then we're going to shred it and
put it back in the sauce. And then we're going to cook some Rio noodles, rigatoni. So I guess
you could use any kind of noodle you would like to have. But I'm going to use rigatoni, just like
Denise told me to. Chicken, our chicken is done. And I love using scissors. The recipe tells you to
shred the chicken. I don't care for shreds because sometimes it can be stringy if you shred it.
So this way it's not stringy if I just take my scissors and cut it. And I'm returning it to the
pot. Oh, and I need to add the other half of our parmesan cheese. And I did go back and salt it
after it got to cooking. And I probably used close to a tablespoon of salt, maybe a little shy.
Okay, I'm going to back up just a minute. When we started Denise's recipe, she said use one to two
chicken breasts. And they were big chicken breasts and I used two. And I said, well, I'll take the
other two and make Aunt Peggy chicken salad that I can bring to her tonight. Well, to me,
the meat doesn't match the amount of sauce. So I'm going to have to think of something else to fix
Aunt Peggy's supper tonight. And maybe she would enjoy some of this. Her appetite has changed so
drastically. Things she used to love, she doesn't care anything about them. The only thing that's
remained steady is she would never in her whole life turn down a milkshake. So I kind of trick
her a little bit by making her milkshakes with that boost, that supplement, but she loved them.
Here we go, Denise. Cheers. Very good. Very good. I love the garlic, what that did to it.
I would probably add a little bit more salt, maybe just a little bit more, but you know,
or I'm a salt thing in this house of one. Michael's the pepper man and I'm the salt girls.
All right. So I'm waiting on my pot of water to boil for my rigatoni and it's going to take about
11 or 12 minutes. And then we're not going to mix this all together. We're going to put our rigatoni
on our plate and then cover it with our sauce and the chicken. And it's going to be real good.
And Denise recommends serving this with a salad and Texas toast, I think she said, which is so
good. You know, that thick, thick bread. Okay, Denise, as they say, the proof's in the pudding.
And this looks so good. That rigatoni is going to get that sauce all down in the middle of it
and it's going to be so good. Wow. Looks delicious. You know, and I'm a girl that
likes a lot of pasta and a little bit of salt and Michael's the other way around.
So I'm going to add a little bit more parm to the top of that. And Denise, I so appreciate you
sending me this recipe and it's easy. It just takes time, you know, cooking the chicken,
but it just looks yummy. I actually tasted the sauce and it's very good, delicious.
And I agree with Denise, a salad and maybe not Texas toast, but a nice French bread.
And one of the desserts that I've shared with y'all recently for Valentine's, that's all you
need. And maybe a couple of candlesticks on the table. It's delicious. Thank you so much, Denise.
Love and best dishes and happy Valentine's day to you.
