Purely arriving at Flinders Island is an experience unto itself. Either a 30 minute light airplane flight from North Tasmania or a 1 hour flight from Essendon, Victoria; you fly over spectacular islands (and would be forgiven for thinking you were flying over Northern Tropical Queensland) to land on your not so average runway. Flinders Island is the largest island in the Furneaux Group located in the Bass Strait, northeast of Tasmania. Flinders Island is part of the state of Tasmania, but feels like its own country.

Hey Wombat! What's up?
Oh my god, you are so cute!
Let's hang out!
Are you gonna move?
Yeah.
Oh, you're so cute.
So can we just debrief about what happened last night at the pub?
Because I won the beer raffle.
I told you I'd win.
What did you win?
I don't know, but I won five free pots of beer.
Five free pots of beer!
Lucky number 29, didn't I?
29.
Lucky number 29, I won five drinks.
Luckily I didn't drink them all myself, although I had a good nudge.
No meat tray, wasn't it?
No meat tray.
One for me, one for Jono, and then three for the gentleman at the bar.
So I made friends with Tom the Oyster Farmer,
Mark the Furniture Maker,
Slash Fisherman.
Doesn't want to make furniture anymore.
He just wants to find fish.
And we might have a new business opportunity.
You want to go into business with me?
Yeah.
Do you know what?
The thing about Stanley, it's one of those towns where you walk in
and you can see why people just kind of don't ever leave.
It's just really beautiful.
Adam Carey herself, the owner of Ship Inn,
she just came up here and she's like,
I love this place, I need to stay.
And so her family all moved up here and I can totally see why.
Everybody's so friendly and hospitable and it's just,
I don't know, it's just really nice, isn't it?
Where are we going?
We don't even know.
Where are we going, Jamie?
Bridport.
Bridport now.
Bridport.
These controls are live.
Okay.
And control the aircraft.
Do not touch anything.
They can come right out to here.
And there is foot pedals as well.
They are active.
Okay, do not touch anything.
You can rest your feet on there, just don't move them.
Okay.
Oh my gosh, this is amazing.
Take you to an island.
We're going to follow you so we can get some shots.
You can get some shots of the plane up beside you.
Oh, that would be sick.
Not too close, obviously, yeah.
We're going to show you a little island
and then from there you'll jump in the plane
and go across the Flinders.
So it's not the normal run that we would do
all the way to Flinders.
Yeah, it's a bit of a special treat.
What are we going to take today?
In one day.
Getting some good photos.
Yeah, amazing.
How's this convict house?
So that is an Airbnb.
It's actually quite affordable.
You get the whole island.
The whole island.
Airbnb.
Peter just needs to bring you across, though.
Otherwise, you'd have to be a pretty strong swimmer.
How good is that?
No, seriously, this is so incredible.
I can't think of anything else.
I call it the oh my god island.
Yeah, oh my god.
Oh my god, you know.
Flying over it is something else, though, just to see it.
It's been lovely to meet you.
Yeah.
Well, hopefully we will maybe see you on Friday.
Yep.
I shall leave you to it.
Oh, thank you so much.
Enjoy your trip.
Yeah, thanks.
See you on Friday.
Safe flight.
Good to meet you, mate.
Yeah, we'll see you soon.
Follow me and jump.
He's chill.
He's cool.
Hey, wombat.
What's up?
Oh my god, you are so cute.
Let's hang out.
Are you going to move?
Yeah.
Oh, you're so cute.
Hey, wombat.
They're gorgeous.
They're like little bears.
Hey.
Oh, he's running away.
So we just got into Flinders Island and we're going to have to do an impromptu let us in
because this place that we're staying at is absolutely incredible.
Are you going to come?
It's called The Crayshack and this is going to be our home for the next two nights.
I'm kind of struggling to put into words just how incredible this place is.
First of all, look at the view.
This place is absolutely insane.
All right, welcome to The Crayshack.
We're going in.
You ready?
Look at this greeting pamper filled with all the goodies, which we've already actually
packed in already.
Gorgeous Flinders Wharf wine and I love this big thing of water.
And then look at this.
Saltbush, the local plant.
Beautiful, salty.
This place feels so homely and just so warm and cozy.
Here we are.
Hi.
They made us a sign, I love it.
This is really, really cool.
It's an AB off abalone competition.
You've got to catch your own abalone, then you've got to cook it and then it gets judged.
Very well stocked wine cellar, which is cute.
Coffee, tea.
Do you want a coffee?
Tea?
Really?
All right, we'll keep moving and I'll show you the rest of the pad.
Up here, this is a cool chill out rumpus area room.
I like this and I like the detail because it is the Cray shack.
It's filled with crays.
And then there's this.
All sorts of paraphernalia.
Look at that view from the kitchen, looking out.
I really like the decor in here.
You've got a space to chill out here, space to chill out there.
I love it.
We've got two bedrooms.
This is one of the bedrooms.
Gorgeous.
Look at that view.
They've all got that beautiful netting and now I've just got to figure out which bedroom I want to stay in.
This one has a lot of light in it.
This one feels really, really nice.
I love this feeling.
It's very warm in here.
So warm and cosy.
Look at that.
I think this is where I'm going to spend the night.
Fresh rosemary from the garden.
Okay, open plan living kitchen area.
And then the fun continues.
How many barbecues do you need?
How good is that?
You've got four barbecues and I can't wait to shower in here.
It's an insane view.
I'm kind of lost for words.
I'm just kind of a bit zanned and chilled out.
How good is this loo?
The loo.
You can knock on your anchor to see if anyone else is inside.
I don't even know if you can see this but can you go inside and see what the toilet paper is hanging off?
Oh my god, I love that.
Oh, it made me laugh so much.
You've got more kitchen, laundry, everything space out here.
More fridge area.
Do you want a beer?
Let's go check out the beach.
How good are these fire pits?
Might have to get them going tonight.
How beautiful is that?
Look at it setting.
Cheese!
Want to go for a walk?
It's pretty amazing waking up, hearing all the birds.
Did you hear them all this morning?
I think there would have been heaps of wallaby out here as well.
Look at this.
What got me is just the overall experience of getting here, isn't it?
Getting on the plane.
It's just amazing.
And then you get here.
I think yesterday I was a little bit overwhelmed.
I think I was sort of running on adrenaline.
I was also a bit tired.
And I was just like freaking out about how incredible it was.
This morning I feel really good.
I feel like really centred and calm.
Oh, that was a great walk.
And now back.
Back for brekkie.
And a big lunch today.
I'm glad we went for a walk.
Yeah, what's on the menu for lunch?
Oh my gosh, I'm nervous.
I haven't had breakfast because I'm like really excited about what they're going to serve up for lunch.
So we're going to the Flinders Wharf, who are the guys that manage the Cray Shack.
We haven't seen it yet.
I'm really excited to see it.
They've got a restaurant there, a bar.
They've just opened a distillery.
Whiskey, gin, vodka.
Maybe a bit of a tasting session, you know?
It's kind of like a little kid on Christmas morning.
It's just like...
Better pack up.
Shower.
Let's go.
Ready to roll?
Yes.
Ready.
I think.
I'm excited.
Are we late?
Yep.
Come on.
Let's go.
Sorry.
I'll be in the car.
I'm going to go to the loo.
See ya.
I'm going to the car.
Come on, Ari.
Let's go.
We're running late.
All right.
We're off to Flinders Wharf.
Let's do this.
You're all going to be what?
Pretty excited about the food.
What are you going to eat?
I'm going to eat everything.
I don't even know what they're going to put on.
Hi, guys.
There we go.
Oh my gosh.
Thank you for coming to town.
How are you enjoying time?
We're like already island time.
We've got time.
So this is your baby, Marky?
Yeah, it is.
The boys from Bertha Meats just came over, showed me how to use her.
Oh, what?
Outstanding, isn't it?
That is incredible.
Oh, and so that's the saltbush that we were eating a bit of yesterday as well?
Yep.
Grows locally right here.
This is Australian salmon.
Golden Chevalier.
Local length Flinders Island lamb.
These are for a romesco, which you'll be having today with your octopus.
How long have these been in here?
This lamb's smoked up to six and a half hours.
The fish, two.
This nag's about an hour.
Same with these bad boys here, yeah.
That's amazing.
How does it work?
It's a little Mad Max chamber here.
Very Mad Max.
So coals and wood here.
Wind funnels up here.
Could I like overburn something?
Could I oversmoke something?
Yeah, of course.
So they have a feel and time usually.
So how does that feel?
It feels great.
So how long have you had this smoked up?
One week.
One week?
Yeah.
Oh my gosh.
It was built out of recycled hot water cylinders.
How long have you been on the island?
Just over two weeks.
Wow.
You're like a week older than the smoker.
Where are you originally from?
Brisbane.
So many...
Big change.
A lot of Queenslanders.
Oh my gosh.
Flinders Island turns it on.
Thank you.
What brought you down here?
Was it the Allure Flinders Walk?
The environment, the produce, the lifestyle.
I don't think you can live anywhere else like this.
So we've got the deli fridge here.
These are all small woods made from Casalinga Itazi.
He uses a lot of the island's product to make us.
You'll actually normally have a beehive in the wall here.
Oh my gosh.
But unfortunately it's not in today.
It's just getting switched over.
But we do have a great honey producer.
And we've got some meadow honey here which we will be selling at $11 a kilo.
So people can bring their own empty jar and fill it up.
Look at that.
Beautiful honeycomb.
Yeah, this was kind of a dream by Damien who has a shack here.
He's been coming here ever since he was a kid.
Because this has been four years in the planning or something.
At the back here we've got this little trailer.
It's like a mobile milk kiln.
So that's what you burn to...
And that will permeate through the grain and give it that really smoky flavour.
You can taste it if you like.
Yeah.
Got that really awesome kind of smoky barbecue flavour.
Oh my god, that's awesome.
This is about 30 kilos.
We need about 200 kilos to make a single batch of whiskey.
Oh, Scotch whiskey.
Same thing?
Every whiskey is whiskey.
So by definition a grain spirit.
Scotch is just whiskey made in Scotland.
That's it?
That's it.
I did not know that actually.
It's as simple as that really.
It's like champagne.
Like champagne, yeah.
And cognac and all those things.
There you go.
First thing we kind of look at is the appearance of the whiskey.
And it might sound like a silly thing but that is going to kind of dictate the way that you will experience it.
A lot of the time with whiskey it will be darker if it's been aged in a cask for longer.
Or if you see a dark red hue or an amber hue, it means that that barrel has had something in it like port or sherry, like a fortified wine.
If your whiskey is completely clear, it probably means that it's spent no time in a barrel and you can't even call it whiskey at all.
Okay, that was the best lunch I've ever had in my entire life.
Not just lunch, meal.
It was incredible.
Octopus.
Beef cheek.
What are you checking?
Just doing a sweep.
Make sure we haven't...
I've never been so sad to leave a place.
I just need to take a mental note.
I've got a flight to catch.
Yeah, let's get this plane.
See you, Crayshack.
Is this not the best minibar you have ever seen?
Hi.
Oh my gosh, your home is beautiful.
Oh my goodness.
This is insane.
That was like the best experience ever.
Again.
The baby wombat.
Oh my god, where?
My side or your side?
My side.
I'm trying to res you.
Oh my god.
Baby wombat.
I don't know.
It's probably run away.
Is there a car coming?
No.
It was like this big.
Oh, they're all over there hanging out.
I can't zoom in and out.
There's like a little...
