So Tender Beef! Roast Beef with Red Wine Sauce and Creamy Mashed Potatoes
Tender braised beef, an aromatic red wine sauce, and creamy mashed potatoes with Parmesan. Accompanied by caramelized shallots with brown sugar and balsamic. A delicious dish for a cozy family dinner or a special Sunday!
INGREDIENTS
For the beef and sauce:
1 kg (2.2 lb) roast beef from the neck or chuck of a young bull
2 tbsp oil
Salt and black pepper
2 onions
2 carrots
100 g (3.5 oz) celery root
3 garlic cloves
2 tbsp tomato paste
250 ml (8.5 fl oz) dry red wine
600 ml (20.3 fl oz) beef broth
Bay leaves
Thyme
Rosemary
15 g (0.5 oz) butter
For the caramelized shallots:
300 g (10.6 oz) shallots
20 g (0.7 oz) butter
2 tbsp brown sugar
Water as needed
1 tsp balsamic vinegar
Salt
For the mashed potatoes:
800 g (1.8 lb) starchy potatoes
About 30 g (1.1 oz) butter
150 ml (5.1 fl oz) warm milk
40 g (1.4 oz) finely grated Parmesan
Salt
Nutmeg
PREPARATION:
Pat the beef dry and season with salt and pepper. Heat the oil in a roasting pan and sear the meat well on all sides. Then remove it.
Peel and chop the onions, carrots, and celery root. Sauté in the roasting pan. Add the chopped garlic and tomato paste and briefly sauté.
Deglaze with 250 ml (8.5 fl oz) of red wine and let it simmer for a moment. Pour in about 600 ml (20.3 fl oz) of beef broth. Add bay leaves, thyme, and rosemary.
Return the meat to the roasting pan and braise covered until tender and soft.
Peel the potatoes, cut them into pieces, and boil them in salted water until soft. Drain and mash. Stir in about 30 g (1.1 oz) of butter and the warm milk. Season with salt and nutmeg.
Peel the shallots and sauté in butter. Add 2 tbsp of brown sugar and continue to caramelize. Add a little water as needed, cover, and simmer for about 5 minutes. Then deglaze with balsamic vinegar and season with salt.
Remove the finished meat from the roasting pan. Reduce the sauce as needed, season with salt and pepper, and stir in the butter.
Distribute the mashed potatoes on plates and sprinkle with finely grated Parmesan. Serve the beef with red wine sauce and caramelized shallots alongside.
