My cat ESCAPED from the van | Alone in the forest | Living in my van
So right now they say that I'm online.
Usually the dish kind of like doesn't stay flat like this, but hey, I guess the dish
found a satellite right above us, maybe, I don't know.
Hey, we are online, cool.
So Miss Kitty wanted to go for a walk, she's like, let's go.
Crazy, that's really high, baby.
Yes, you're high.
Oh my goodness, insane.
It is quite cold in the valley here.
We are in the Squamish Valley.
It's cold.
They are surprised they don't have any snow because on my way here on the road, it had
some snow, but not here exactly, right beside the river.
But it's really damp and I don't see the sun yet.
So hopefully the sun's going to poke.
You can see with the amount of moss that this valley doesn't get that much sun here.
But yeah, it is a little bit chilly, I must admit.
We're going to have to make a fire later on.
All right, let's go, Kitty.
So we are currently at a campground and it's quite funny.
Right there, there is no bathroom here in this facility.
Please dig a small hole and cover what you've done.
Just like this, guys.
I'm going to stay inside.
It's cold a little bit there.
Speaking of sun, a little bit.
And our dish moved a little bit while I was away.
How do you find a better spot?
Yeah, maybe we're going to have a clear sky, guys.
I can hear a lot of eagles.
That's their season, especially in Squamish.
But around the Vancouver Island, too, several places.
They come from the salmon.
They come fishing in the winter here.
I can definitely hear them.
One, I was wondering if it was right above me.
I was like, so close.
But the only one that I saw was just a little bit further there.
So I think it's just because of the echo of the mountain.
So I've been charging my battery from my other big zoom camera.
So we'll see if we can get a little smaller glance of them closer.
That'd be great.
But it's just gorgeous here.
It's got a beautiful waterfall and the snow is just super close from here.
Gorgeous here.
Stay cozy inside, kitty.
So I think tonight we're going to try to make a cauliflower taco.
I say I'm going to try because I'm going to make my own taco shelf.
And I'm not sure if that's going to work.
We'll see.
So I had some cauliflower that was really overdue to be eaten almost.
So we're going to eat that.
I'm going to make the batter.
Cover them in the panko.
Is it the panko breadcrumb?
Will be, yeah, I guess so.
So yeah.
So it's almost like a pancake mixture if you want almost.
And we're going to cover that.
Then we're going to need some baby wipe because we're going to be dirty.
And I put a little bit of oil on my cast iron, on my Dutch oven, sorry.
So let's put a couple of that.
Let's coat that.
All right, the cauliflower are over there.
A little bit of oil at the bottom.
And I have some left, but I don't want to overcrowd.
So this is going to be a second batch.
I forgot.
I'm like, oh, that would have been so good with avocado or some hummus or something like this.
I forgot to buy that at the grocery store.
So I put some raw cashew into some water to soak them.
And we're going to make like a little white sauce somehow.
All right, I'm going to put this in the fire and we're going to try to make the taco shelf.
Hopefully it's going to work.
So the raw cashew that I soak.
I'm going to put a little bit of plant-based milk and we're going to try to make a sauce.
The sauce was not thick enough.
So I'm making just a base to take them up.
So it's just vegan butter with some flour that I'm going to cook for just a minute or so.
So let's pour that.
This sauce is so good.
Sometimes you wonder like, why I know so many recipes or what I come up with so many recipes
with exactly what it is right now.
It's just, I have an idea.
I didn't get all the ingredients or I just failed to eat that and I don't have all the
ingredients and I just whipped something with just, yeah, which is what I have.
So we have a little sauce that I put back here.
So the onions are cooked.
I'm just going to rinse that.
I'm going to try to make the actual taco shell.
Last step, I made the taco shell mixture.
I'm going to put in the description.
I don't know guys.
I never made this.
The first one, it's a disaster.
Didn't work.
And it tastes like, like a pancake more than anything.
So all the ingredients are pretty much like ingredients that you will use for a pancake.
So I'm going to try it again.
They said to start at a low heat.
So I reduced the heat.
I'm going to try again.
All right, let's turn that off and let's go grab the cauliflower.
All right, this smell.
So good.
Okay, so we do have our sauce here.
I'm just going to mix it up.
So spicy, cheesy sauce, which is really good.
So let's put a bunch of that.
I put a bunch of those caramelized onion, some of those cauliflower.
Which look very good.
I'm going to have some for tomorrow as well.
No complaint, I'm pretty sure.
I don't really have like anything other than that today.
So there you go.
Put some little bit of green there.
The sauce is really, really good.
Cauliflower crispy too and good flavor.
Not a huge, huge fan of the bread.
I think it was just the wrong type of bread for what I have.
But it's still okay.
It tastes more like a crepe though.
I need more sauce.
I went inside the van and Katie escaped.
All right, we need something good.
Let's try this.
It's not the first time that she kind of escaped a little bit.
So I'm not worried by the way.
But she's right there.
Hello monkey.
Yes, you want some treat?
Good girl.
You don't go far.
Are you gonna stay good if you're out leash?
Yeah.
You're gonna follow me?
Okay, let's go for a walk.
Okay, let's go.
Good girl.
Let's go.
Yes.
Let's go kitty.
Good girl.
And kitty is pretty good for that.
She's following me like she's right here right now.
She's following me.
The only concern why I don't do it very often.
First, I'm scared every time and I'm worried about every time.
But it's also because if she sees a bird, things like this or a mouse,
even if I call her, you know, even if I shake the treats, nope.
She's like, nope.
This is way more interesting than your treats.
So she never go far.
But her camouflage little fur make me like, you know, sometimes like, where is she?
Like, you know what I mean?
So yeah.
Like she's on the on the branch there.
And you know, she barely, you can barely see her.
Because she's the same color than everything.
And I don't go to, I don't walk too far from the van when I go off leash with her
because I don't want her to feel comfortable going further and further.
So she's got plenty enough, plenty of trees and things to smell and look close to the van.
She just climbed a tree right now.
All right, little monkey start to get dark.
All right, let's go.
Let's go back inside.
It's warmer.
Let's go.
Good girl.
She came back by herself right inside.
You're a good girl.
All right.
I'm going to let the starting up because we're going to spend some time inside with Miss Kitty.
All right.
So I think I'm going to spend some time on internet because we do have internet here.
I don't have any cell service, but I do have internet.
I need to set up something on my phone to be able to do some phone call with the internet itself.
But it's all good.
So I think I'm going to snack on this.
I thought I would leave that for tomorrow, but I kind of failed to snack.
And I think tomorrow we're going to try to find a place for the actual Starlink
because right now I've been sleeping with the Starlink beside my bed.
And I'm going to let you with Miss Kitty.
Hey, little escaper.
What are you doing?
You did good.
You did good, off leash.
Yeah, you did good.
You want to give them a kiss?
Oh, that was small.
You went off leash.
Kitty, you have to give them a treat.
You have to give them a kiss.
Kitty, give them a kiss.
Give them a kiss.
Kitty.
No, thank you.
Thank you.
All right.
I'll let you back there and we'll look at what's going on outside.
