Light, nutritious, and comforting—great for breakfast, lunch, dinner, or gatherings. Traditional, satisfying, and loved by all ages.
Hey everyone, I'm not really into cooking on the regular, but I love me some dumplings.
I just picked up some meat today. So let's make these awesome celery pork dumplings.
Now this filling recipe is different from all the others. It's my absolute favorite one that
I'm terrified of losing. So I gotta share it with all my family and friends. The more people who
learn it, the better. For the meat, you can use whatever you like. Pork belly works. Or you can
go with whole leg meat, pork shoulder, or hind leg meat. Fatty or lean, it's totally up to your
taste. Chop it up into minced meat with a knife. If you want to make it easier, just use a meat
grinder. But honestly, I think hand chopped meat has way better texture and stickiness.
It's got the real soul of the dish. Chop for about 5 or 6 minutes, until it's kinda chunky
and gets that gluey consistency like in the video. Then dump all of it into a big bowl.
Next up, get 300 grams of celery. I already washed it earlier. Chop it into tiny celery
bits. The ratio here is 1 part celery to 2 parts meat. So 300 grams celery goes with 600 grams
meat. Toss the chopped celery into a large bowl. Sprinkle some iodized salt on top. Give it a good
mix with your hands. Then pour in boiling water around 120 degrees Celsius. Blanch it for a bit.
This trick keeps the celery crispy, and locks in all that fresh flavor. It's basically the
same as blanching it in a pot. Let it sit for about a minute or two, then fish it out. Wrap
it in cheesecloth and squeeze out all the extra water. After that, put it right into the bowl
with the meat. Grab half a carrot. First slice it, then shred it. Finally, chop it into tiny
carrot pieces. Add it to the bowl with the celery. Take a small handful of dried shrimp. Chop them
up a little bit. If you don't have dried shrimp, you can use dried small shrimps or fresh prawns
instead. Add those to the bowl with the carrot and celery too. Now let's season the meat filling.
To save myself the trouble of washing another bowl, I just push all the veggies to one side of the
bowl. Add 6 grams of salt, 3 grams of black pepper, 15 grams of light soy sauce, and about
20 grams of water. Since we're cooking at home, no need to be super fancy with the technique.
Just do it however you like. Pour the water in little by little. Mix and knead the meat until it
gets sticky and absorbs all the water. The end result should be this fluffy texture, no visible
water left. And when you lift it up, it sticks to your hand without falling off. Then mix all the
veggies and the meat together really well. Set it aside for a few minutes to let the flavors meld.
If you want that juicy burst in every bite. Here's the secret. Grab a bunch of ginger.
Mince it up real fine. Then pour hot oil right over the ginger paste. This ginger oil is the
soul of this dumpling filling. Way more fragrant than just adding raw ginger. Pour that fragrant
ginger oil right into the filling bowl. By the way, this recipe works amazing with beef or shrimp
too. You can also throw in some diced onions or garlic oil if you want. Mix everything together
super thoroughly. And there you have it. A delicious celery pork dumpling filling ready to
go. Alright friends, making these videos takes a lot of time and effort. I share easy life hacks

Freeze them in the fridge. Perfect for the kids' breakfast. Just a few minutes to cook in the
and it's done. This filling is so chewy and flavorful, not greasy at all. Super aromatic.
You can never get this taste at a restaurant. Homemade is clean, hygienic, and way more
affordable. No weird additives. Just good quality ingredients. Tender, smooth, nutritious, and
delicious. With all those veggies in there, even the pickiest little eaters will love it. If you

Make sure to eat your dumplings while they're hot. See you in the next one.
