Hello everyone, welcome to home cooking with me Hema Subramanian.
Today I'm going to show you guys a classic starter snack and this was a much requested
recipe. So why wait, let's get started and see how to make these delicious vegetable cutlets.
For the vegetable cutlet mixture, first I've boiled five potatoes, removed the skin,
added to the bowl, one cup boiled peas, one medium-sized carrot grated, one medium-sized
capsicum finely chopped, one cup of cooked cauliflowers, they cut into nice small pieces,
one large onion finely chopped, two green chillies finely chopped, a piece of ginger
finely chopped, a few coriander leaves finely chopped, the juice of one lemon.
Now I'm going to add all the spice powders, starting with quarter teaspoon of turmeric
powder, one teaspoon salt, one teaspoon red chilli powder, half teaspoon garam masala powder,
half teaspoon cumin powder, mix everything together. The best way to mix it is using your
hands, so start mixing it. So I've added the vegetables I wanted to take for the cutlet,
you can add any vegetables of your choice. Now I'm going to add a few small cashew nut bits,
this is optional. Next I'm also going to add quarter cup of bread crumbs, just for it to
absorb if there's any moisture and to give it a nice binding consistency. Mix everything together.
I've made a video on how to make homemade bread crumbs, I'll give the link in the description,
so you can see that and make your own bread crumbs at home. Take a little bit of the cutlet
mixture, gently press it, you can make these nice round patties. You can shape it to whichever size
and shape you want. I'm just going to make a cornflour slurry to dip the cutlets. Take one
teaspoon of cornflour, add a little water, just mix it till the cornflour is completely dissolved.
After coating the cutlets with bread crumbs, keep it in the refrigerator for about 10 minutes
before deep frying. Take a kadai, pour enough oil for deep frying. You can also shallow fry
them if you like, but I'm going to deep fry them. Once the oil is hot, maintain the flame on a
medium. Gently drop the cutlets into the hot oil. Deep fry them till you get a lovely golden brown
color. Wow, you can see the cutlets have got a lovely golden brown color to it. Remove them from
the oil and keep it aside. So there you go, here are these yummy and tasty vegetable cutlets.
This can be made anytime and you can enjoy it with some nice ketchup or mayo by the side.
Now I have deep fried these, but you can also shallow fry them and you can make them. So do
enjoy these delicious vegetable cutlets and let me know how it turned out for you guys.
