Learn how to make restaurant-quality fluffy egg pancakes at home. This guide covers the essential steps of separating eggs, whipping whites to stiff peaks, and using a steaming technique on low heat to ensure a soft, moist, and airy texture.
Don't scroll past too quickly or you'll miss the simple secrets to making perfectly fluffy,
soft, smooth, and restaurant-quality eggs right at home. Please watch until the end of the video
because there's something really interesting and surprising that you'll wish you had known sooner.
Let's get started right now. First, prepare the eggs and gently crack three to five eggs
into a clean bowl. Then, separate the egg yolks from the egg whites. Use a spoon to carefully
scoop out the yolks from the whites. Perform this step slowly and gently to keep the yolks intact.
This method helps you separate the eggs quickly and cleanly while keeping the yolks whole.
Next, add one tablespoon of milk to the egg yolks. The milk will make the mixture softer,
moister, and give the pancakes a smooth texture. Then, add a little vanilla to enhance the aroma
and stir well. After that, use a sieve to sift three tablespoons of all-purpose flour into the
mixture. Sifting the flour not only makes it finer but also prevents lumps, helping the mixture
combine more easily. While doing this, set the yolk mixture aside and move on to beating the egg whites.
A small tip. Put the egg whites in the refrigerator or freezer for about 10-15 minutes before beating.
This helps them whip up fluffier. Use an electric mixer starting at low speed. When small bubbles
appear, gradually add the sugar little by little. Then, increase the speed and beat until the egg whites
reach stiff peaks. They should be glossy, firm, and hold their shape. Be careful not to overbeat
as this can cause the mixture to separate. Next, add about one-third of the beaten egg whites into
the yolk mixture and gently fold to loosen and combine them. Then, pour this mixture back into
the remaining egg whites and gently fold from the bottom up to preserve all the air bubbles. This
will help the pancakes rise high and become soft and fluffy when cooked. You are watching this video

for beautiful shapes or simply use a spoon if you don't have one. Heat the pan over low heat. Brush
a thin layer of oil to prevent sticking. Then, use a paper towel to wipe off any excess oil.
Gently pipe or spoon the batter onto the pan into round mounds. You'll notice the batter holds its
shape well and doesn't spread. This is a good sign that the egg whites were whipped correctly.
Next, add a few drops of water into the pan to create steam. Then, cover with a lid and cook on
low heat for about five to seven minutes. The steam will help the pancakes become moist, soft,
and evenly cooked from the inside. When the bottom is lightly golden, carefully flip the pancakes
and continue cooking for another three minutes. Always keep the heat low during this process
to prevent the outside from burning before the inside is fully cooked.
If you want to make a larger pancake to share with the family, you can use the same method.
Simply use a wider pan and pour the batter into one large round shape. Thank you for taking the

Cover with a lid and cook on low heat so the pancake cooks slowly and evenly. When the time
is up, you'll see the large pancake has risen beautifully, becoming tall, fluffy, and incredibly
soft. At this point, you can gently touch the surface of the pancake to check the elasticity.
If it springs back lightly and doesn't stay indented, it means it's perfectly cooked.
The large pancake rises high, is wonderfully fluffy and soft. When cut, the inside is moist
and even, giving it a restaurant-quality feel. By now, the cakes in the pan are cooked through.
I'll remove the lid and transfer them straight to a plate so they keep their beautiful color
and stay nice and fluffy. The final products are two very appealing versions.
The small pancakes are lightly golden, soft, and fluffy. When serving, you can drizzle a
little honey on top to add a gentle sweetness and a richer aroma. The most important secret
