
Satay Chicken Legs with Peanut Sauce.

Drumsticks are such good value, I don't know why we don't use them more often! So here's a fabulous way to cook chicken legs in the oven - turn them into satay drumsticks with a peanut dipping sauce for dunking. The shape of the drumsticks is perfect for this! Tastes like your favourite Thai Satay skewers - but no skewering required.

SATAY DRUMSTICKS with Thai Peanut Dipping Sauce
1.5kg/3lb chicken legs (~10 pieces), make 3 slashes in flesh
SATAY MARINADE:
1/3 cup (80ml) coconut milk, full fat (I use a 270ml small can*, the rest goes in the sauce)
1 1/2 tbsp curry powder (just regular eg Clives, Keens)
1 tbsp Thai red curry paste (Maesri brand is my favourite but any will do)
1 tbsp liquid coconut oil or any plain oil (veg, canola, peanut)
1 tsp white sugar
1 1/2 tsp cooking salt / kosher salt
PEANUT SAUCE:
3/4 cup (180ml) coconut milk, full fat (the rest of the 270ml can)
180 ml milk, full fat
1/4 cup (60g) natural peanut butter**, it’s runny, not the spread kind like Bega, Skippy etc
2 tbsp white sugar
1 tbsp Thai red curry paste
1 tbsp apple cider vinegar, or regular white vinegar
1 tsp dark soy sauce^
1/2 tsp cooking salt / kosher salt
Garnishes (optional) – Chopped peanuts, red chilli, coriander/cilantro leaves
1. Satay drumsticks - Mix marinade in large bowl, add drumsticks, toss then use hands to rub into the slashes. Marinate 3 hrs if you can, else bake now (there’s plenty of flavour in paste + sauce).
2. Place on rack, bake 35 min at 200°C/390°F (180°C fan-forced), then flick to grill/broiler on high for 3 – 5 min until you get some light charring (move chicken to 20cm/8” from heat source). Serve with sauce, sprinkled with garnishes of choice!
3. Sauce – Put everything in a saucepan and stir every now and then on medium low, simmering gently, for 5 min. Don’t let it get too thick, want it to be dunking consistency.
If you don’t have one of these small can sizes, just measure out what you need from a regular 400ml/14oz can. Leftover is the perfect amount to make peanut sauce for Gado Gado!
** Spread is ok too but sauce will be thicker and slightly less peanut flavour
^ Darkens sauce, sub regular soy or 1/4 tsp salt but sauce will be paler
