This is my (current) favourite Cucumber Salad. Full of fresh Mediterranean flavours with a garlicky lemon dressing, fresh dill and mint, and salty crumbled feta. Good enough to pull out at a gathering, quick enough for dinner tonight.

Mediterranean Cucumber Salad

500g / 1 lb Lebanese cucumbers, ~3 medium, sliced 3-4mm / 1/8″ thick (Persian, UK: mini cucumbers)
1/4 red onion, finely sliced (or 1/4 cup finely sliced green onion)
1/4 cup roughly chopped fresh dill
1/4 cup roughly chopped fresh mint
1/3 cup (50g) crumbled Greek feta
LEMON GARLIC DRESSING – shake in jar or whisk, set aside 5 min:
1 tbsp fresh lemon juice
3 tbsp extra virgin olive oil
1 small garlic clove, crushed using garlic press or finely grated using microplane
1/4 heaped tsp cooking salt / kosher salt
1/8 tsp black pepper

DIRECTIONS
Put all salad ingredients in a bowl with half the feta. Pour over dressing. Toss. Pour into bowl, sprinkle with feta. Enjoy! (Leftovers are lovely too, the cucumbers get lightly pickled).

NOTES
Sub fresh herbs with 1/2 teaspoon of dried dill/mint, add it into the dressing. Lemon juice – use white or red wine vinegar, or apple cider vinegar. Feta – no sub! Instead, add extra 1/4 teaspoon salt into dressing plus lemon zest from whole lemon.
