Slow Living in Norway - Thrift flipping, baking rhubarb crumble and a hotel visit

The end of summer in Norway brings a quiet, strange in-between feeling. In this vlog, I’m navigating the transition into autumn alongside long, sleepless nights with newborn twins. To find balance amidst the exhaustion, I’m focusing on small, meaningful creative projects—including upcycling an old thrifted tea box into a personalized home decor piece inspired by a favorite poem.

We also bake a nostalgic, warm rhubarb crumble (recipe below!) and take a much-needed slow weekend getaway to a historic coastal hotel here in Norway to recharge.

EASY RHUBARB RECIPIE
Serves 4 | Oven temp: 200°C (390°F) | Bake time: ~30 min

Rhubarb Layer:
400 g rhubarb, washed & sliced into 1 cm pieces
90 g granulated sugar
40 g brown sugar
1 tsp cinnamon
1.5 tbsp potato starch (potetmel) or cornstarch

Crumble Topping:
70 g all-purpose flour
35 g rolled oats
1.5 tbsp sugar
1/2 tsp baking powder
40 g almonds
75 g cold butter, cubed

Instructions:
1. Preheat oven to 200°C (390°F) standard upper and lower heat.
2. In a food processor, blend the flour, oats, sugar, baking powder, and almonds until the almonds are finely chopped. Add cubed cold butter and pulse a few seconds until crumbly.
3. In a bowl, toss sliced rhubarb with the sugar, brown sugar, cinnamon, and potato starch.
4. Transfer the rhubarb mixture into a small baking dish. Gather the crumble dough with your hands so it forms small clusters, then spread evenly over the rhubarb.
5. Bake on the middle rack for about 30 minutes until golden and bubbling. (If it gets too dark on top, lower the dish and drop the heat to 175°C).

Serve warm with vanilla ice cream, whipped cream, or vanilla kesam!
