Potato Salad 2 Ways: Gumbo Style vs. Sweet Relish

Today I’m making potato salad two ways so you can see exactly what separates Louisiana-style potato salad for gumbo from classic Southern potato salad.

The first version is thick, creamy, savory, and made without sweet relish or sugar. It’s designed to sit right in the center of a hot bowl of gumbo, where it cools and balances the rich roux, sausage, seasoning, and smoke.

The second version is the traditional Southern potato salad many of us grew up eating. It has that familiar sweet-relish flavor, plenty of egg, mustard, and a creamy texture that works perfectly with barbecue, fried chicken, ribs, and Sunday dinner.
