Sugar – 175g (¾ cup + 2 tablespoons)
Coconut milk or coconut cream – 60ml (¼ cup)
Vanilla extract – 1 teaspoon

For an Egg-Free Version
Natural yogurt – 120g, in place of the eggs


For the Chocolate Ganache

Chocolate – 150g
Heavy cream – 80ml (⅓ cup)

Equipment

Measuring cup size: 240ml
Baking pan: 20×20cm (8×8 inches)

Bake in a preheated oven at 170°C (350°F) for approximately 30–35 minutes.


Method

Make the Coconut Cake

Add the softened butter, sugar and vanilla extract to a large mixing bowl.
Whisk for about 2–3 minutes, until light and creamy, scraping down the sides of the bowl as needed.
Add the eggs and whisk for another 2 minutes, until well combined.
For an egg-free version, replace the eggs with 120g natural yogurt.
Sift in plain flour and baking powder.
Add the desiccated coconut.

Gently fold everything together until partially combined.
