Garlic Shrimp (Quick Stir-Fry)

Garlic shrimp made this way is fresh, fragrant, and juicy—absolutely delicious!

For the fresh shrimp you just bought: First, make a diagonal cut on the shrimp head, squeeze out the shrimp brain, and pull out the shrimp vein at the same time. Cut off the shrimp feet, slit the back of each shrimp,
Slitting the back of shrimp is to facilitate flavor absorption and shorten the cooking time
then process the other shrimp using the same method. Finally, rinse thoroughly and drain them before stir-frying.

Make a sauce: Mix cooking wine, light soy sauce, oyster sauce, sugar, and half a bowl of water. Stir well and set aside.
Heat cooking oil in a wok. Add the shrimp and stir-fry over high heat until the shrimp change color. Remove and set aside temporarily.
Pour the prepared minced garlic and chili into the wok. Stir-fry over medium heat until fragrant.
Put the shrimp back into the wok, add the prepared sauce, and continue stir-frying to coat every shrimp evenly with the sauce.
Then sprinkle a handful of chopped green onion, stir-fry evenly and it’s ready to serve.
Every bite is so flavorful—truly satisfying! Give it a try!
