Here's my recipe for Bowser's Big Donuts from Mario and Luigi: Bowser's Inside Story. They're big enough for Bowser, but you can easily share this massive donut cake with friends.
For Big Donut: 4 eggs 1/2 cup sugar, separated 3 TBL canola oil 1/2 cup milk 1 cup flour 1 tsp baking powder 1/4 tsp salt
For mirror glaze:
Gelatin starter: 2 TBL water 1/2 TBL gelatin
The rest: 1/2 cup dutch process cocoa 1/3 cup water 1/2 cup sugar 2 TBL butter 2 TBL dark chocolate Edible glitter, optional Sugar sprinkles, to decorate
For Big Donut: Preheat oven to 350 degrees. Separate eggs. Place whites and egg yolks in separate bowls. Add 1/2 of your sugar to the bowl with the egg yolks. Whisk until thick and light in color. Whisk in oil until totally combined. Then, whisk in milk, flour, salt, and baking powder. Set aside.
In a separate bowl with a clean whisk, begin to whisk egg whites. Once soft peaks are formed, add remaining sugar and whisk until you have still, marshmallow-y peaks. Add 1/3 of the egg white mixture to your yolk mixture. Whisk it in, you don’t have to be super careful. Then, add your lightened mixture into the rest of the egg whites. Fold carefully until combined.
Carefully pour batter into a donut shaped pan that’s on top of a baking sheet about 1 inch away from the top. The rest of your batter you can pour into cupcake cups and bake off. Place cake in the oven for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool completely upside down.
For glaze: Soak gelatin in water. Set aside. In a small bowl, combine water, butter, sugar, and cocoa powder. Cook over low heat and whisk to combine. Bring it to a boil, then quickly turn off the heat. Add gelatin mixture and dark chocolate. Mix until melted. Add in your glitter dust if you want. Continue to mix as it cools. It will thicken after about ten minutes into a pouring texture.
Carefully pour glaze over cake. Then, sprinkle on as much sugar sprinkles as you want. Allow the glaze to set for about five minutes. Slice and serve. Recipe by Jammy Cooks.
This video provides a step-by-step tutorial on how to bake and glaze a large, light donut inspired by Bowser. The process involves creating a fluffy sponge cake using a separated egg technique and finishing it with a glossy, chocolatey mirror glaze and rainbow sugar.
Let's cheer Bowser on by making him a big donut.
We'll need to separate eggs.
Here's my egg separating station.
Crack an egg into your center bowl
and carefully scoop out your yolk.
I do this because if you split an egg and the yolk touches the white,
the whites will not whip up.
And we're making a light donut here,
so we need to be able to do just that.
When you're done, you'll have a bowl of yolks,
a bowl of whites, and a bowl of eggshells.
Grab those yolks.
add about a quarter cup of sugar to them
and then start whisking you can make
this cake with an electric mixer
but I'm gonna burn a few calories and do it by
hand keep going until it's thick
and pale yellow like this then whisk in some
oil add your milk finally whisk
in your dry stuff
when that's done set it aside
now in a clean bowl
with a new clean whisk start beating those egg whites
we're going for soft peaks here like
this now add in the rest of your sugar
Whip some more until you get stiff peaks.
Man, all this heavy whisking is gonna
make me super buff.
Stiff peaks are thick, shiny, and marshmallow-y.
Take wood sticks
to your whisk when you're done
and mix it into your yolk mixture. Just lighten
it up. Then you can add the whole thing
to your egg whites and carefully fold it
until there's few to zero streaks.
Carefully pour it into a silicon donut
pan that's on top of a baking sheet.
Tap it on the counter a few times to knock
out some of those big bubbles.
Then you can bake it off.
Let it cool slightly on
the counter. Then flip it over to cool on a cooling rack.
We'll have leftover batter which
you can bake off into little cupcakes. Yum!
Donuts aren't donuts without glaze. Let's make one. First
we gotta soak some gelatin.
Combine water and gelatin and set it aside. In a small heatproof
bowl place water, butter, sugar,
and cocoa powder. Place it on a low
burner mixing constantly. Once
it begins to boil turn off the heat and add dark chocolate
and your soaked gelatin. If you want at
this point you can add some edible pearl dust.
Makes everything sparkly. You can leave it out
though. The glaze is to cool down before we pour it.
It will also thicken considerably. Once it's good
and thick, pour it on in a circular motion.
It should drip down on its own, but you can also
coax it with a spoon if you want.
Then, donuts with some rainbow sugar.
Not sprinkles. Sprinkles
are trash. Now it's ready to eat.
You can eat this whole thing in one sitting if your mouth is big
enough. Or do what I do and slice it up like a cake.
Your choice. Yummy. Aw, look who's hungry.
