The Ultimate Asian Cucumber Salad | Roasted Peanuts & Garlic Sesame Dressing

This Asian cucumber salad has two little tricks that make a big difference: 10 minutes of salting the cucumbers and finely chopped roasted peanuts that catch every bit of garlic sesame dressing.

Ever made cucumber salad only to find the dressing watered down at the bottom of the bowl? That's exactly what we're trying to avoid here. And those roasted peanuts? They're not just a topping. They bring a little crunch to almost every bite.

🥒 ANOTHER RECIPE IN OUR JAPANESE-INSPIRED CUCUMBER SALAD SERIES!
We've already made cucumber salads with carrots, radishes, and different dressings. This time, I'm keeping the cucumbers but changing what goes around them.

Fresh garlic, gently heated sesame oil, a little honey, toasted sesame seeds, and roasted peanuts chopped into small pieces.

What I love about this combination is that you don't need a complicated sauce. Just a few ingredients, used in the right order.
And please don't skip those 10 minutes of salting the cucumbers. It helps keep the dressing flavorful instead of watery.

🥒 SALAD INGREDIENTS
• 4 Asian cucumbers
• A little salt, for drawing out excess moisture
• 1 tbsp sesame seeds, lightly toasted
• ¼ cup roasted peanuts, finely chopped

🥣 GARLIC SESAME DRESSING
• 3 garlic cloves, finely chopped
• 1 tsp chili powder
• 3 tbsp sesame oil
• 1 tsp salt
• 1 tbsp honey

👩‍🍳 LET'S MAKE IT

1. Cut the cucumbers into bite-sized pieces. Sprinkle with a little salt and leave for about 10 minutes.
2. Finely chop the garlic and combine it with the chili powder.
3. Gently warm the sesame oil, then carefully pour it over the garlic mixture.
4. Add the salt and honey, mix well, and allow the dressing to cool slightly.
5. Drain the excess liquid from the cucumbers and transfer them to a bowl.
6. Pour in the dressing and toss gently.
7. Add the toasted sesame seeds and finely chopped roasted peanuts. Give everything one final toss and serve.
