How to make Coconut Waffle Cake | Coconut Cake Recipe

Welcome to my channel and of course to my wonderful kitchen. Today I want to show you one of the most amazing cakes ever. I say that about all my cakes, but this one is really, really yummy. So we're going to be using these wafers that I got from an international Russian store. That's where you would be able to find them. I will see if anybody knows where you can find them online. Please leave the links in the comments below to help your fellow bakers. but yeah this cake is gonna have sort of condensed milk filling with sort of shavings of coconut it's really like creamy it's very crunchy it's very coconutty it's not like too much coconut but it's a little bit and it's so good guys the cake sort of soaks through overnight and makes the sort of wafer layer so soft but still that crunchy oh my god it's really the best thing ever and the cake didn't last very long in my fridge it was gone really really quickly so i wanted to share this recipe with you i hope you like it upload a new video okay guys and girls let's get started into your stand mixer add softened unsalted butter together with condensed milk you want to add whisk attachment and we're going to mix everything together on high to medium speed until the mixture becomes nice and fluffy this is a really delicious cream and i absolutely love it make sure you scrape the sides when you're whisking it to make sure the butter and the condensed milk have mixed together and you can see it becomes nice and white color just like that as some of you know I have launched my online cooking school where you find these in any Eastern European stores you can find these maybe online on eBay but yeah pretty much they have to be you know found in any polish russian lithuanian latvian estonian shops where they sell all sorts of things they will always sell these wafers and these is you know you cannot replace these with any other kind of wafers that you can get and it's too much effort making your own so yeah if you can't find these sadly you can't make this cake but i hope that you can so add about a tablespoon of your creamy condensed milk sort of mixture onto each layer and i like to use a spatula and sort of even out all the holes i like a lot of cream because they are quite dry and crunchy so think of a waffle cake um you know we still want it very to be very crunchy but you kind of want that creamy filling inside so just go around all the edges make sure you don't leave out the edges with each layer and as you've noticed I'm using colorful wafers just to give it more of a beautiful look and then you want to kind of just go around and cover everything around with your spatula and lastly you want to add one more layer and at this stage we're going to place something heavy on top our wafers so it's good to place a baking tray and maybe something else like a I would suggest using a pan rather than a pot of water because it kind of gave a dense hole into my cake and then I'm going to whisk cream so I'm just whisking cold double cream or heavy cream until soft peaks you can also add sugar if you want to or you can keep it plain it's completely up to you place it into a piping bag and then spread more condensed milk on top and then add shredded coconuts I've also added a bit of chocolate right in the middle but this stage is completely up to you be as creative as you want sort of decorating your cake I'm also adding some chopped dark chocolate and I'm gonna pipe cream sort of puffs around the cake to make it very very decorative but yeah feel free to decorate your cake how you want if you want to add more coconut inside each layer you can or you can even add coconut into your cream either way it's going to be so delicious and i know you're going to love it i like to decorate it with some raspberries just because fresh fruit gives it a beautiful look and you know who doesn't like fresh fruit on top of your cake so you want to leave the cake to sort of soak up all the mixture and it will become quite soft and delicious always use a bread knife to slice a waffle cake because you know it's still a waffles and they're quite hard but it should be very delicious and soft in the middle just look at that all the layers have soaked through it looks absolutely delicious and it's just melts in your mouth it's almost like you're eating an ice cream like creamy coconut chocolate ice cream all together and it still has that crunch at the end I really like this recipe guys I really hope you try it I've got loads of other waffle cake recipes on my channel and my
