This truly is one of the best cheesecakes ever. As you know, I love no bake cheesecakes and Mirror glazing my cakes. I wanted to combine both and create this stunning cake. All of my recipes are simple enough for a novice baker since there’s no baking involved, yet they taste like they were made by an absolute pro. This is utterly delicious and different to my other cheesecakes – the Biscoff Spread creates a delicious spiced cookie flavour compared to the sweetness of the others on my blog. This cheesecake suits all of the needs of loving Speculoos/Biscoff, No-bake recipes, and Cheesecake in general. Its utterly scrumptious!

This no-bake cheesecake recipe is one of my most favorites to date: it’s my No-Bake Cookie Butter Cheesecake! For those of you who have never had Biscoff Cookies before, they’re some delectable biscuits that are buttery, rich and spiced. They taste like a cross between a short bread cookie and a graham cracker. Somewhere along the line, Biscoff started making these cookies into what is known as cookie butter.

Add your lotus cookies together with normal digestive biscuits in the food processor and you can use any cookies that you like for this recipe and we're going to blitz this together until it's nice and smooth. Then add melted butter inside and mix everything together with a spoon until the mixture becomes nice and sticky. Add your cookies into your prepared tin and make sure you spread it around and using a a spoon pressed down to make sure it's nice and even everywhere. In a bowl add your cream cheese with mascarpone cheese and icing sugar then add vanilla extract and mix everything together until it's nice and smooth. In a different bowl add your heavy or double cream and whisk it until it's nice and soft then add your cream cheese mixture and whisk everything again for a few minutes. Separate the mixture into two different bowls equally. In a bowl add more crushed cookies and mix everything together. Place a piping bag over a glass and then add your cheesecake mixture inside. This will make it much easier to pipe and make sure that the mixture is spread evenly. Now going up and down, press your piping bag and spread your cookie butter cheesecake mixture on top and then using a spatula gently press inside and even it out. I have melted some cookie butter in a cup and I'm adding that as a extra layer in the middle so spread it around make sure it's evenly distributed. I have put the remaining cheesecake into a piping bag as well and I'm going to do exactly the same and pipe inside around the edges and make sure we can cover the whole cheesecake. Once it's piped using a spatula just gently press inside and make sure all the edges are covered and the cheesecake is nice and tightly sort of packed inside. Place the cake into the freezer overnight or at least six to eight hours. The first thing you want to do is get your gelatin ready so I'm using one sachet or 12 grams. Then add cold water and leave it to set. Take a Take a jug where you will be making your glaze and add your white chocolate in there. Then add condensed milk. In a small saucepan add your sugar, water, glucose syrup and cook until it just starts to boil. Our gelatin has set so we are just going to add this into our hot glucose mixture and mix that in. Once your gelatin has dissolved we are going to add it into our chocolate and condensed milk mixture and leave it for a few minutes. get the desired color just add your food coloring of your choice and mix everything together and then strain the mirror glaze through a sieve couple of times so there are no bubbles. Once your cake is nice and frozen we're going to apply the mirror glaze on top. I'm using the dark red color first and then I've added some red mirror glaze inside and I'm going to just pour it all over and you will see the two color pattern will start to appear so make sure you cover all the edges and it's just enough to cover the whole cake. Gently go around with your spatula to get rid of any excess mirror glaze and then place it into the fridge for at least half an hour. I have wrapped a chopping board in some foil to make it look really pretty and presentable while sharing my cake so gently put that onto your board. If you have a cake stand that can fit this type of long cake then please do so and then we're going to decorate it with some chocolate balls, some crushed cookies and add more cookies on top. The cake is really easy to slice so make sure you use a hot wet knife. This recipe will make about eight slices of cookie butter cheesecake.
