Hi guys! Hello everyone! Welcome to my channel Alla's Yummy Food.
Today I'm going to show you how
to make gluten-free oladushki with blueberries.
They are so amazing. We're going to be making gluten-free oladushki
from scratch and I'm going to show you how to make a blueberry jam,
which only contains two ingredients.
Really delicious, very simple recipe
and such a perfect brunch or breakfast idea for your family.
So I hope you enjoy this video. Let's get started!
First thing we're going to do is make our homemade blueberry jam.
It's really easy.
All you want to do, you want to add your frozen blueberries.
You can also use fresh.
I'm using frozen wild blueberries together with sugar.
And mix everything together on the stove
and cook this for 5 minutes or so.
Once the mixture starts to bubble up,
you want to add a little bit of cornstarch.
And just mix everything together until
the mixture thickens a little bit.
It's not going to be completely thick unless you want it to.
I do like to keep it a bit still you know liquid
so that you can pour that blueberry sauce all over
your oladushki and once your jam is done you want to just set it aside
and leave it to cool down
completely to make oladushki we're going to add
egg sugar vanilla extract a little bit of salt
and mix everything together in a bowl you don't have
to mix this for long just enough to mix all
ingredients together. You then want to add your kefir
or buttermilk a little bit at a time so keep
adding it in little stages mixing it through
making sure it's all incorporated and then adding
the rest of your buttermilk until your mixture
is completely mixed through. Once you're done that
you want to add your gluten-free flour
and I like to add two tablespoons at a time to make sure
there are no lumps.
Keep mixing through and another tip I want to give you is that it's
really important to have all your ingredients at room temperature.
Your eggs and your buttermilk
should be at room temperature.
Keep adding flour until you finish up with your gluten-free flour
and I'm using self-raising gluten-free flour
so make sure you use that and then keep mixing until
you have no lumps. Now you want to add your bicarbonated soda
and mix everything together
one more time. The mixture will start to bubble up
and that is completely normal. You then want
to add your frozen blueberries. You can also use fresh.
Because I'm using frozen, I'm not going to
mix this for too long, just enough to make sure they're mixed through.
And I still want to have
the color of my oladushki nice
and golden with few blueberry tips in there. So the less you mix
the more color you're gonna have so this is very important.
Next I'm gonna add a little bit of oil
into the pan and what you want to do you want
to make sure the pan is nice and hot before adding
any buttermilk pancakes inside
because we really want to create a beautiful crust on top. Now
another tip I want to give you is to make sure you oil your spoon
so put that into your oil or
pour oil over your spoon and then take the mixture
from the side this way you're not going to disturb
the bubbles and the pancakes will be nice
and fluffy you want to add one tablespoon at a time
as they do expand and they grow a bit bigger
and try and space them out otherwise they will glue
together but that even if that happens don't worry about it
that's completely normal so add
them inside on a high heat
and then you want to lower your heat straight away you want to cook
them for some time uh i would say a couple
of minutes until you start to see it's gotten brown
around the edges and the main tip i want to give you
um when they're ready is when they have a lot
of bubbles on top when they have a lot of bubbles
that means they're ready to be flipped so you want
flip the pancakes onto the other side
and cook them for a couple of more minutes. They will cook
a lot faster on the other side because they're practically cooked.
Once they're ready you can
drain them on a paper towel if you want to get rid of any excess oil
or you can serve them straight
away. I absolutely love buttermilk pancakes
a Ladushki with you know they're just so amazing.
i do recommend serving them fresh when they've just been made
and here i'm going to top them up
with my homemade blueberry jam sour cream
and a few cookie crumbles you can also add some nuts
i'm just going to show you how it looks inside guys they're
so amazing they're crunchy on the
outside so soft and fluffy inside you have blueberries
in each bite you have blueberry jam
with sour cream the combination is unbelievable i absolutely love them
so much i think it's such
an easy dish and everyone should
be making these for brunch or breakfast
especially now i really hope you enjoyed this video thank you so much
