SAI OUA - Lao Sausages Recipe

These are the best sausages ever! Great for any BBQ or just some mash and veg. The recipe makes around 25 decent-sized sausages. Obviously, you can make them smaller if you would like and make more, but we like them chunky.

Ingredients
2.5 kg of pork
1.25 kg of fat
500 g of shallots
2 tbsp of dried chillis
500 g of lemon grass
250 g Desiccated Coconut
1 tbsp of Salt
1 tbsp of MSG
2 tbsp of ground black pepper
2 bunches of spring onions
1 tbsp of fish sauce
1 reel of cotton for tying sausages up
1 pack of sausage casings
