Lithuanian Potato-Cheese Dumplings - varskes cepelinai - are hearty affairs that take some time to make but are well worth the effort. They are known as zeppelins in English because of their shape. These dumplings are great for meatless or Lenten meals.
Welcome to my channel!
Hello everyone!
I'm so excited because today I'll show you how
to make cepelinai with cottage cheese
filling.
Now you might think this sounds crazy but it's
so popular in Lithuania and in Eastern
Europe in general and I used to have them a lot as a kid.
And this is basically a potato thing like stuffed
with cottage cheese inside and then
it's boiled and topped with crispy bacon
and onions and sour cream and that is just a dream
come true. In Russian it's called цепелина с творогом.
I hope you enjoyed this video.

It really makes me happy. And now let's get started.
The first thing we're going to do is peel our potatoes.
Add about 4-5 potatoes into
a pan and we're going to boil them.
Add the rest of the potatoes into a deeper dish with
cold water and onions.
Add cottage cheese into your bowl, add some salt, mix it
through. Put your raw potatoes in a food processor
and blend until nice and
smooth. You should have a large pot of potatoes like that.
We're gonna squeeze
all the water out of it.
You need to make sure you squeeze all the juice out of
your potato. It needs to be completely dry
and keep the juice for later. Once
Once your potatoes are cooked you need to mash them up.
Add salt and pepper.
You should have two big balls of raw and cooked potato
and we're going to mix them together.
Take a big handful of your potato,
flatten it out and place one side and then fold it
in and gently wrap around and form a nice big cepelinai.
In a small bowl add your potato juice
and then at the very bottom you can see there
is our starch so we're gonna add about
one tablespoon. Into your hot pot of
water add salt and potato starch with juice.
Cook them for about five to eight
minutes
on a very low heat.
I've had few
and they're
so filling and so
delicious and I'm going to be making them
with other fillings so don't forget
to check my channel out in the next few weeks.
Give me a big thumbs up, don't
forget to leave your comments down below.
