Hi guys, welcome to my channel, Alice Yummy Food.
Really excited today, I'm making a fluffy bunny cake.
And I'm making my cake with pineapple and coconut.
The coconut obviously is the fluffy bit.
And I'm going to decorate it in a really, really cute way.
And you can use my example
or you can use any other cake recipe that you have.
And use your imagination, decorate your bunny in any way you like.
So let's get started.
For a delicious pineapple cake, I'm using 8 canned pineapple rings,
1 egg, 120 ml of coconut milk, 120 g of plain flour,
I've also added a pinch of salt and 1 tsp of baking powder,
40 g of unsalted butter, vanilla extract and 140 g of caster sugar.
Again, and for our icing and decorations,
I'm going to be using 4 tablespoons of coconut milk,
160 grams of unsalted butter, room temperature,
500 grams of icing sugar or confectionery sugar.
Here I've got 200 grams of shredded coconut.
Now you can use as little or as much as you want,
depending how fluffy you want your bunny to be.
Then for decoration, I've just used
everything that I have in the kitchen.
I've got some strawberry laces, marshmallows, some chocolate buttons.
These are going to be for the eyes.
And these are going to be for the whiskers
to make our bunny look really cute.
And then I've got some green and pink food coloring.
Okay, I'm ready to make my cake now.
So in a large bowl, put your unsalted butter,
all the flour with baking powder, salt, and all the caster sugar.
And I'm just going to mix it with my hands just
to get this sandy consistency.
If you do have a mixer, just use that.
Okay, the second step is to put some vanilla extract
into our coconut milk, about a teaspoon.
And now we're just going to mix it all together with the flour mixture.
I'm going to be using my mixer.
Add one egg
and mix it again until it's all well combined.
Okay, I've preheated my oven to 170 degrees.
Now I've chopped my pineapple into little chunks like that.
And I've prepared my two baking tins, 20 centimeters each.
And we need to butter them, so I'm just going to use the cake spray
to make sure they don't stick.
I find it's just the easiest way
and I don't have to get my hands messy.
And then we're going to put the pineapple just around,
cover the tin.
And now I'm just going
to divide
my mixture between
two tins equally.
Now these go into the oven for 20 to 25 minutes.
Keep checking, see when they go golden brown,
then take them out and check them with a toothpick.
Okay, while my cake is baking, I'm going to make my icing.
Icing takes actually quite some time to make
because it's coconut milk, so it takes a bit
longer to whip.
So first we've got our bowl,
and we're going to mix our icing sugar with butter.
Got my icing sugar here,
and I've cubed the butter so it's easier to mix.
Just place that in here.
And once it's all incorporated together,
then I'm going to slowly add the coconut milk.
Okay, so I've
been mixing for a
good five minutes.
You can see it's nice and fluffy and really white with nice peaks.
So it's going to be very easy to put our bunny.
I'm just going to try a little bit.
Oh my God, this is so good already.
Well, the bunny's baking and I'm going to set this aside.
So I've set aside a little bit of icing
and I'm going to put a few drops of pink food colouring, mix that in.
This is going to be for my bow tie and my pink ears, just like that.
And I've also prepared a piping bag with a plain nozzle.
It's going all nice and pretty.
So we placed one cake as a head,
then we take the second cake here
and I'm going to cut just along, lined out.
So we're going to cut out
two ears and a bow tie
at the same time, like that.
So we've got our ears and our bow tie.
Okay, now I'm going to cover my bunny in the icing.
I finished
my bunny,
put a bit of
green food
colouring
into our
shredded
coconut,
and made a bit of grass, just to give it more colour.
Now, how cute does this look?
Now, just tell me if you don't want to eat this bunny, because I do.
And when you cut into it, it's like a little surprise, you know?
Really nice chunks of pineapple, you get this coconut flavour.
It's just an amazing cake,
and I can guarantee everybody's going to love this cake.
And how cute is this?
Again, I just can't help thinking how cute this cake is, so...
