I'm Jessica. Today my dad is going to teach me how to make riskunskrött, rice porridge,
and ris a la malta, rice pudding, with family recipes food unfolded.
These two dishes are traditional Christmas dishes in Sweden, where we come from.
And both of these dishes can easily be made vegan by swapping the milk, cream and butter.
Okay, let's begin!
Hi dad!
Hi Jessica!
Hi!
It's almost Christmas, so I would like to make a rice porridge.
Yes, that's great! And easy to make.
Can you help me?
Do you have all the ingredients?
Yes, I think so.
Do you have rice porridge?
Yes.
And water, of course.
And you can also use cinnamon sticks if you want.
Okay.
Are you going to make a rice a la malta afterwards?
Yes, I am.
You don't usually use cinnamon sticks.
Okay.
And you need salt, which we have at home, and 8 dl of milk.
Yes, I have that too.
Then you take 2 dl of rice porridge, and 4 dl of water.
And then you boil it in the porridge, together with the salt.
It's just 0,5 dl of salt.
Let it boil for 10 minutes.
And stir it constantly, so it doesn't burn.
Then you take your milk, 8 dl of milk, and stir it.
And then you heat it up carefully, so it almost starts to boil.
The milk foams up a bit, so you have to fill it up when it's still there.
Then you take it away from there.
You put it in your bed, and put it under your blanket.
And there it should be for 2-3 hours.
Until all the milk is absorbed in the rice porridge.
So you should go in there once every half hour, and look at it, and stir it a bit.
So that's good.
Dad, now the porridge is ready.
The porridge is ready? Did he taste it?
Yes, he did.
Okay, then you just have to eat it.
Yes, but I would like to have rice or malt, I think.
Rice or malt, yes, but then it should be cold.
Then it should be refrigerator-cold.
So if you have the cold outside, first put it in the refrigerator, and then it's cold.
Then you're going to whisk the whipped cream.
For that rice porridge you made, you're going to use 3 dl of whipped cream.
Which you whisk together with 2 tablespoons of vanilla sugar.
And 0.5 dl of regular sugar, so it's just sweet and tasty.
You whisk it hard.
It shouldn't be butter, but it should be solid cream.
Or solid cream.
When you whisk that, you gently turn your cold rice porridge in there.
So it feels like you have a solid consistency.
Then you're going to eat it with a bit of yoghurt jam.
It looks a bit weird.
And there you have it.
Rice porridge and rice or malt.
I decided to enjoy it with my friends this year.
That's really good.
Merry Christmas!
