Are you tired of your soggy steamed eggs with shrimps turning out with a bunch of air pockets?
Don't worry, today I'll share with you all my tips and tricks.
The shrimp that we're using today has about 26-30 pieces per pound.
I have already de-vinded the shrimp. Use a knife to carefully butterfly the de-vinded shrimp.
Slice a small hole in the center. Insert the tail into the hole.
The eggs that we're using are large organic eggs, but you can replace them with the regular ones.
We will use 5 large eggs. In a mixing bowl, crack in the eggs, and add the salt.
Whisk. 5 large eggs are equivalent to about 1 cup, or 250 ml.
Here we also have 1 1⁄2 cups, or 356 ml of lukewarm chicken stock.
Yep, you can also replace that with water.
To ensure the steamed eggs will come out super soggy,
the temperature of the liquid should be between 98-105 degrees F.
And the ratio of the eggs to liquid should be about 1 to 1 1⁄2.
Pour the lukewarm chicken stock inside.
Whisk.
Through a fine mesh strainer, pour the egg mixture into a serving bowl to remove any air pockets.
This is another step to ensure that we'll have super soggy steamed eggs.
You'll see. Put the serving bowl on a steaming rack, and cover it with a plate.
In a large pot over high heat, bring water to a boil, and turn to low heat.
Transfer the steaming rack on it, and cover the lid.
Steam until the egg cooks through, for about 15 minutes.
And here's a little test for you,
what is one thing I did to ensure that we'll have super soggy steamed eggs?

And cover.
Add the shrimp on the steamed eggs.
Cover up with the lid.
Over low heat, steam for another 2 minutes.
Carefully take out the serving bowl.
Sprinkle with scallions.
In a small pan over high heat, add the oil, and heat it up until smoking hot.
Carefully pour the hot oil over the steamed eggs and scallions.
This will add another dimension of flavor to the dish.
Lastly, add the soy sauce over the steamed eggs.
I like to share with you what my 5-year-old daughter said to me the other day
while she was picking which cup to use during lunch.
She said to me, which cup I use really doesn't matter,
it's the quality time we spend together that counts.
Wow, I hope you and your family will spend some
great time together while eating the super soggy steamed eggs.
