Hello! Welcome back to my channel, Devina Hermawan.
Today, we'll be making easy, practical Eggplant Sambal. It also saves oil since we won't fry the eggplant.
There are only 3 main ingredients: purple eggplant, garlic, and red Thai chili.
You can also mix in some green Thai chili. We also need a bit of oil and seasonings.
This Eggplant Sambal will be savory and spicy. It's great with rice, also fried eggs and sweet soy sauce.
You can also serve it with other side dishes.
Let's start with the eggplants. I'll steam it instead of frying so it's healthier and it saves oil.
Remove the tip of the eggplants.
Slice into 2 - 3 piece and halve each piece like this.
Next, instead of frying, we'll steam it for 7 minutes. It'll cook the eggplants, but they'll still have some texture.
It's different when we fry it, where the eggplants will absorb more oil.
This method saves oil and it's a great alternative, too.
The eggplants will cook quickly. While we wait, let's prepare the Sambal.
The Sambal we're making here is very simple, similar to Sambal Korek or Sambal Goang.
Mash the garlic with seasonings: salt, sugar, and flavor enhancer.
The salt will help to mash the garlic faster, too.
Next, add the Thai chili. You can mix it with the green ones, too.
I prefer for it to have a rougher texture like this.
Give this a taste. We'll mix it with the eggplants later, so it has to taste bold and not too plain.
After adding the eggplants in, the taste will be milder so make sure everything tastes okay.
Now, heat the oil.
Once it's really hot, pour the oil into the chili.
The eggplants are cooked. Shred them once it's not too hot and they can be handled.
I prefer to shred them rather thinly so the texture looks more interesting.
As you can see, the texture is different to eggplants that have been cooked for too long.
It has a soft texture, but it's still a bit fibrous. It's similar to oyster mushroom but softer.
Now, mix them together and serve it with anything you like.
You can't stop eating rice when you have a side dish like this.
The Sambal is spicy and savory.
By shredding the eggplant, we create a different texture to the regular Eggplant Balado.
It's also a great dish for vegetarians, so you can give this Sambal a try.
You can complete this dish with a Fried Egg. Sweet soy sauce will also balance the spiciness.
This dish also goes along with other side dishes like Fried Tofu or Fried Tempeh.
Okay, then. Thank you for watching. Comment below on your favorite practical eggplant dishes.
