Hello! Welcome back to my channel, Devina Hermawan.
Today, I'll be making Coconut Chicken Soup with simple ingredients.
This recipe is inspired by the Chinese-style Coconut Herbal Chicken Soup.
To make that dish, you'd need special ingredients, so I'm making a real simple, practical version.
First, for the chicken, you can use free-range or roosters. You can also use broilers, but the broth won't be as rich.
For the aromatics, I use whole black and white pepper. You can also use the powder ones.
I also use ginger and fresh Shiitake mushroom. You can use the dried ones, which has a more distinct smell.
I'll mix it with white Shimeji, but you can also use other mushroom, such as Enoki or wood ear.
I also use tuberose flower or kim cam. If you don't have any, skip it.
Other than these ingredients, you can also add ginseng or pre-packaged Herbal Chicken Soup ingredients.
Or, you can add goji berry or jujube. Today, I'll simply use the aforementioned ingredients.
To make it even more special, I'll add coconut water. Here, I'm using Hydro Coco.
I'll also make the special dipping sauce with soy sauce, Thai chili, and garlic.
The ingredients are simple, but for Herbal Chicken Soup, the cooking process is the most important part...
...so you can get a clear flavor as well as a fragrant broth that has no odor.
Now, chop the chicken to your preference.
I'll chop it to small pieces so the flavor can be infused better and the chicken can be cooked faster.
Now, I'll add a lot of salt to the chicken, then I'll massage it in.
We add a lot of salt not only to add flavor but also so we can clean the chicken better.
Massage the chicken, then let it rest for 10 minutes while we slice the ginger thinly to bring out its flavor.
Slice the Shiitake. If you use dried Shiitake, soak it first until it's soft, then squeeze the water out and slice it.
Slice the Shimeji, too.
Lastly, I'll use tuberose flower or kim cam. Tie it into knots so it doesn't disintegrate.
Kim cam is usually very salty because it's dusted with salt. So, you can rinse it first before adding it to the dish.
You can also add other Chinese herbs.
After the chicken is rested for 10 minutes, rinse it well. Otherwise, it will definitely be too salty.
Rinse it well, then set it aside.
Now, let's make the Soup! I've prepared boiling water. It's Coconut Chicken Soup, so we need coconut water.
Here, I use Hydro Coco. Just add it in to the pan. Find the water to coconut water ratio in the description box.
I use Hydro Coco because I keep it in stock at home for my family to drink every day.
As far as I know, Hydro Coco is made from real coconut water.
I keep the big 1L pack in stock at home.
As we know, coconut water is rich in nutrients.
Drinking coconut water every day, combined with healthy lifestyle...
...will fortify your immune system, helping you maintain your health despite your busy daily life.
Once the water boils one more, add the rinsed chicken in, then add the other ingredients: ginger, Shiitake, Shimeji...
tuberose flower or kim cam, as well as the black and white pepper.
I use whole peppers so the broth will be clearer. But, you can also use powders. The flavor won't change.
Here's an important note: when cooking a herbal soup, you must cook it on low heat.
The Soup will be more fragrant and clear if you cook it on low temperature for a long time.
Now, we just have to cook it.
If you use small pieces of chicken, it may take about 1 hour to cook on low heat.
But, if the pieces are large, especially if you use roosters, it will take longer to cook.
If you use broilers, cooking it for 1 hour should be enough.
Herbal Chicken Soup usually isn't heavily seasoned. Typically, it's only lightly salted.
Here, I didn't add any more salt because the chicken was marinated with salt and the tuberose flower is already salty.
We can also get some sweetness from dried fruits, jujube, or coconut water.
Usually, if I'm serving Herbal Soup with rice, I'll also make the dipping sauce.
It's optional.
Here, I'll simply slice the garlic thinly.
Slice the green Thai chili, too. You can also use the red ones.
Lastly, add the garlic and chili into the soy sauce.
After cooking it for 1 hour on low heat, the chicken is tender and the broth is fragrant.
Give it a taste and adjust it as needed.
The Chicken Soup's ingredients may be simple, but it's really flavorful.
We cooked the chicken for a long time on low heat, so the broth is really flavorful and savory.
Also, the meat is very tender now.
There's some sweetness from the Hydro Coco. Also, the ginger and pepper makes the broth a bit spicy.
What I mean by spicy is "warm", which goes really well with this type of Herbal Soup.
Here, the mushroom adds texture and aroma.
If you're serving the Soup with rice, you must make the sauce because it'll make the dish even more delicious.
Okay, then. Thank you for watching. Don't forget to check out Hydro Coco.
You can buy it at supermarkets, mini-markets, or your preferred e-commerce sites.
