Hi there! It's lovely to meet you! Today Let's make crispy garlic chicken wings! 500g Chicken wings. I use wingettes. You can buy *whole* chicken wings and then separated drumettes and wings
Season the chicken wings with 2/3 tsp salt + 1 tsp sugar. Before marinating remember to pat the chicken dry with paper towels.
Pat and drying the chicken wings is important because we don't want excess water in the marinade. 1.5 tsp garlic powder + 1/2 tsp onion powder + 1/2 tsp pepper powder.
1/2 tsp chili powder + 1 tsp soy sauce + 1/2 tbsp wine rice. I use rice wine to enhance the flavors in the dish. It tenderizes the meat and balances the flavor to dispel any fishy taste.
6 Cloves of garlic - Cut each garlic into two to three pieces
Then add garlic to the chicken wings
1 Egg. Beat it well
Add 2 tbsp beaten egg. Egg contributes to the light batter. Don't add the full egg. It's too much. You can also use one egg yolk.
Mix all ingredients well. Use your hands to bring all the ingredients together, making sure the chicken is fully coated in the mixture.
Cover the bowl with plastic wrap. Then let them marinate for 4-6 hours. You can marinate them overnight.
We need to marinate them for this long so that the garlic flavor can Infuse into the wings
Before we fry the chicken wings we will prepare the batter mix. 10g All-purpose flour
10g Cornstarch + 5g Potato starch
Mix well. we don't need to add any liquid to the batter mix we will add the dry batter mix directly to the wings
Add the dry batter mix to the wings
Toss with wings to evenly coat
Add cooking oil to pan/pot, enough for deep frying
When the oil is ready, place the wings in
Fry the wings in batches. Working in batches to avoid overcrowding, take a piece of chicken, shake off any garlic that is sticking to the wings because they will be burned, and carefully place it into the oil.
Fry over medium-high heat
In the first minute don't disturb the wings. After 1 minute we can gently stir the pot and break out any wings that are sticking together
Fry for about 5-6 minutes. We will fry These wings twice, so don't fry too much in the first.
After 5 minutes or when the chicken is light golden brown, remove the wings from the oil.
Let them rest for about 15 minutes
After 15 minutes, put the wings back into the oil. Remember to filter the oil and fry it again to economic :))
Fry for about 3-4 minutes. Turn the wings occasionally so that they pick a color evenly
Fry until chicken wings are golden brown and crispy. The purpose of the second frying is to make the crust more crispy
We done! Look at the chicken wing! Perfect color!
I can't believe it's crispy homemade chicken wings
It's crispy on the outside and juicy inside.
Tasty and garlicky! The flavor is phenomenal!
