Ingredients:

1/2 cup uncooked rice
7 oz Kabocha
2 stalks green onions
1 piece ginger
3 cloves garlic
1 tbsp fermented black bean paste
White pepper powder
Salt
Hi everyone, today we're going to make steamed ribs with black bean paste and kabocha and
rice.
I call it a meal in a bowl, so you're going to have protein, of course, from ribs, and
vegetable will be kabocha, and rice.
So let me show you the ingredients.
I don't know if you ever had kabocha, it's also known as Japanese pumpkin, it's sweeter
than regular pumpkin, and also we're going to eat the skin too.
I already brushed clean with my turtle brush, I love my turtle brush, it's also used for
potatoes, just brush off.
So in order to cut this, because it's very difficult to cut it, we're going to put it
in the microwave for about 5-7 minutes, depends on the size of the kabocha.
First, let's cut these three things, the trio, a piece of ginger, just use half of it, enough.
I have three cloves of garlic, I'll set them aside.
I have about 12 oz baby back ribs, you can also use spare ribs, I already soaked about
15 minutes, just need to get the blood and impurity out, let me rinse this, and we can
cut.
So I got it from Asian market, they cut lengthwise, like this, and let's rinse this.
Okay, we just rinsed our ribs, need a paper towel, pat dry, and we also need to get rid
of the skin on the end, just pick up like this, and then you can use a paper towel,
grab it, and then peel off, like that, and then you just cut into pieces in between the
bones, like this, so this is about 12 oz, I may not use all of them, you need to be
able to fit into a bowl, did I call this a meal in a bowl?
And I also have half cup rice, so I'll put the rice at the bottom, I'm going to show
you later how to assemble it, now let's season the ribs.
To season the ribs, we add some salt, and white pepper powder, about tablespoon fermented
black bean paste, and I'll mince the garlic, ginger, mince the ginger, and I use the white
part of the green onions, the green leaves we'll use for garnish later, mix well.
So today's cooking is non-smoking, we're going to steam it with a steamer, and we're not
going to add a drop of oil, okay, we just set this aside, now I'm going to put the
kabocha in the microwave for about 7 minutes, to make it softer before we can cut it.
Now almost 7 minutes, let's check our kabocha, looks like it's softer, a little bit hard,
we just need one piece of it, so let's just use a paring knife, have a cut here, yeah,
that one piece, now we take off the seeds, here's my spoon, so basically I'm just putting
it in just under 7 minutes to make it softer to cut it, otherwise there's no way you can
cut through the pith, now we just cut it into wedges, now we just cut them into two pieces
just like that, this one's good, and then I need all of them, again we need to fit
into a bowl, isn't the color beautiful?
Now we're ready to assemble our bowl, in our bowl we add our rice to the bottom, this is
a half cup of rice, and on the side we put some kabocha, like I said I may not be able
to use all of them, we can make another batch out of them, like that, then our ribs on top,
one more piece, looks nice, and yeah we can make another batch, of course, save it, and on top we
just sprinkle a little bit of water, so this way they don't get dry on the top, and we're ready
to steam, this is my steamer, I love the steamer, it has a fragrant smell from the bamboo,
so we're ready to steam, I already pre-boiled water in a wok, now let's place a steamer,
perfect, and then cover it, we're going to cook about 45 minutes, during steaming we just need
to check on the water level, you can see there's still some water bubbling, but not much,
and we can add some water, hot water, we need a few more minutes to finish this up,
after about 45 minutes, our ribs ready, smells so good, we can garnish with some green onions,
and we're ready to take it out, smells so good, let's eat, have a piece of, so soft, the
kabocha, rice perfectly done, piece of rib, the kabocha so soft, sweet, rice is perfect,
has a flavor from the ribs, black bean paste, ribs done perfectly,
I taste the ginger, garlic, a lot of flavors here, and also the smell from the bamboo steamer,
but if you don't have bamboo steamer, you can just use a steam rack or use a regular steamer,
this is so delicious, please try to make it, very simple, delicious,
no oil added, and just steam it in a bowl, as I said, just dinner or meal in a bowl,
so simple and delicious, hope you guys going to enjoy it, if you like the video,
