The video explores how pistacho is produced and harvested, from the orchards to the processing plants. The process includes shaking the trees, collecting, drying, shelling and packaging millions of dollars of rich, aromatic pistacho beans, ready for the market.
Approximately one million tons of pistachios are consumed worldwide each year
To meet such high demand massive harvesters collect and process tons of fruit
But how do they plant harvest and process billions of pistachios
In this video we'll uncover how one
of the planet's most delicious nuts is produced
The pistachio is one of the oldest tree nuts
known It has been consumed for over 9 000 years
For centuries it was regarded as a valuable food and in many cultures a delicacy reserved for special occasions
Due to its flavor durability and ability to remain dry
for extended periods it was prized by kings and nobles
California is one of the world's leading pistachio producers Its extensive
orchards are primarily located in the San Joaquín Valley where the climate
Warm temperatures and long summers create ideal conditions for growing this nut
Trees require patience and may take up to eight years to produce their first fruits
Each season massive machines traverse the fields shaking the branches to dislodge the
Open shells fall and can be collected without damaging the seed
Farmers help the state produce 250 million kilograms of pistachios
Each year accounting for more than a third of global production
But all of this takes time and significant investment
The story of the plantation begins in a 400-square-meter greenhouse
This is the nursery where over a million new trees are planted each year
Each sapling requires special care and must be kept in a high-humidity environment
and a constant temperature of around 32 degrees Celsius conditions that simulate
e climate that pistachios need to grow strong and healthy
An especially harsh winter could destroy the entire
harvest before the trees have a chance to grow
That is why during the first three months the young ones receive intensive care
In the nursery controlled watering proper nutrients
and constant protection against pests and temperature fluctuations
After three months the plants have strengthened enough to withstand the
e outdoor conditions and continue their development in the orchards where
they will face the sun wind and typical climate variations of their environment
When they reach one year of age the plants require careful pruning
It focuses particularly on the lower half the most resilient section known as the rhizome
This section will be crucial as it will become the solid foundation for the future productive tree
During this process farmers select the strongest shoots and remove the weak ones
ensuring each one has a sturdy structure capable of
withstanding years of growth and producing abundant harvests
The next step is to perform a graft on the upper half of the plant In this
case a shoot from a different variety of the same species is used known as
Kerman renowned for its quality and productivity
Without this graft the tree would grow healthy but produce only leaves no fruit
Thanks to this technique the combination of the resilient rhizome with the Kerman shoot ensures
so that the tree will develop strong roots
and at the same time branches capable of producing high-quality pistachios
Once grafted the trees are
planted in long rows that can extend up to 400 meters
Only female plants produce fruit but they must be pollinated to do so
Therefore in each group of 25 females one male
tree is planted to release pollen during flowering
This strategic arrangement ensures efficient pollination maximizing pistachio
yield and guaranteeing that each
tree achieves its highest possible productivity
Thanks to careful and strategic pruning the trees have
finally reached maturity six years after being planted
They now look lush and robust beginning to bear their first fruits
As the fruits begin to open they reveal their characteristic green seeds inside
a sign that they are ripe and ready to be harvested
But this stage also makes them especially vulnerable
Open pistachios are vulnerable to insects pests and mold spores
Time is critical— they have only one week to
harvest over 300 tons directly from the trees
Every day matters and the pressure to harvest at just the right moment is immense
At dawn the quiet of the garden is broken by the roar of machinery
This strange machine is a shaker designed to replace the work of hundreds of harvesters
Equipped with a receiver that collects the fruits these massive harvesters are positioned around
from the trunk and apply intense vibrations equivalent to hundreds of bars of pressure
Thanks to this movement the ripe pistachios fall covering the orchard floor
In just five seconds the shaker dislodges thousands of pistachios from a single tree
The machine's sloped trays direct the fruit toward
a large auger which gently conveys it into a trailer
Trailers fill up quickly accumulating up to four and a half tons of pistachios
frescoes in a very short time Once completed the trailers leave the orchard and unload
Her precious cargo on conveyor belts transporting it to the trucks
To prevent mold
contamination these pistachios must be processed within 24 hours
After traveling about 75 kilometers from the orchards the pistachios arrive at this facility
processing capacity of over 15 000 tons of fruit per year
Upon arrival the pistachios still retain their characteristic reddish outer shell
a sign that they have just been harvested and still retain their full freshness
The first step is to remove the outer shell of the pistachios To do this the nuts are
Place them in water—empty shells and skins will float while
healthy full pistachios will sink to the bottom
Once separated the wet fruits are directed towering 12-meter drying columns
e grain for storage There a stream of warm air removes moisture without damaging the kernels preparing it for long-term preservation
pistachios for the sorting and packaging stage
Although the entire annual harvest is collected in a single operation pistachios are consumed throughout
all year round which is why most fruits are stored to ensure their availability
Constant On the plant vast rows of storage units reaching up
to 20 meters in height hold more than 700 million pistachios
Storage is carried out in a cool dry environment—ideal conditions for preserving
fresh fruits for nearly a year But pistachios intended for sale require
An additional step selection by size and quality For this they are transported in boxes
up to an enormous selection area of 11 000 square meters Next they are transported
A good shake This is a measuring machine As the fruits overflow
The smallest ones fall through these holes while the most valuable continue on their journey
The next step is to separate the pistachios whose shells are already slightly cracked
open those that remain entirely closed To achieve this enormous drums are used
rotating drums that gently agitate the fruits As they rotate the difference in opening
The shell allows the open pistachios to separate Each pistachio passes throug
an advanced high-tech scanner the machine can process up to five tons
arvesting fruits every hour analyzing each one meticulously to detect imperfections and
cracks When it detects a fruit that does not meet quality standards a
The airflow automatically expels it removing about 3% This rigorous
Control ensures only perfectly graded pistachios reach the final roasting and packaging stages
Next 20 skilled workers carefully inspect the pistachios once more examining each one
fruit with eyes trained to detect any damage that might have slipped past the machines
Yet even these meticulous INSEE analysts with their sharp eyes cannot stop infections
due to fungi which is why they undergo a pasteurization process at 112 degrees Celsius
sufficient to kill the fungi but not to cook the fruit the massive dryers continue
rough his work reducing the moisture content of the pistachios until achieving a crisp texture
5% the perfect level to ensure their flavor and texture Once dried the pistachios are bagged
They are bundled and stacked onto pallets ready for distribution From
here they will embark on their journey to stores and homes around the world
