Mexican Street Corn in a Bowl! Today, we are making an absolute favorite that we’ve surprisingly never made at home before: Mexican Street Corn in a bowl! This easy, flavorful recipe is perfect when you want all the incredible flavors of traditional elote but without the messy cob. We used fresh corn and fried it up in a pan and then tossed it in a creamy, tangy sauce with fresh lime juice, chili powder, and plenty of cheese. Jamie gave it a massive thumbs up, and we are already planning to make this a staple for our next game night! If you can cook it, so can you!
Of course, a recipe video wouldn't be complete without the Snow Dogs Cooking kitchen crew! The kitchen helpers were out in full force today. Eleanor was holding down her spot as the second-best kitchen helper, even if she still hasn't quite figured out how to lay down in the kitchen space and decided to make a quick exit. Meanwhile, Kira was staying out of the kitchen as always. And you know we couldn't skip the most important part of cooking: paying the Cheese Tax! Both girls got their official cheese tax paid right on the floor so it didn't get on the carpet. Memphis was resting up, but the girls definitely made sure no cheese went to waste!
Ingredients 3 cups of corn (fresh, canned, or thawed frozen) 1-2 tablespoons of butter 2 tablespoons of mayonnaise 2 tablespoons of Mexican style sour cream (or regular sour cream) 1.5 teaspoons of chili powder 1/4 teaspoon of paprika 1/4 teaspoon of garlic powder 1 tablespoon of fresh squeezed lime juice 1/4 - 1/2 cup of Cotija cheese (or Mexican style crumbling cheese) Fresh chopped cilantro to taste
Tips and Tricks 🌽 If you want to take this recipe outdoors, you can easily whip up this entire dish on a Blackstone griddle while grilling burgers. 🌶️ Our recipe keeps the heat levels mild so everyone can enjoy it, but you can easily kick up the spice by adding diced jalapeños, cayenne pepper, or a dash of hot sauce. 🧀 If you can't find traditional Mexican style sour cream or the crumbly cheese at your local store, regular sour cream and feta cheese make a great substitute. 🍋 Always keep an extra lime and extra cilantro on hand to sprinkle fresh on top right before serving to make the flavors pop. 🥣 This recipe is incredibly versatile and can easily be adapted into a Mexican street corn dip to serve with tortilla chips for your next party.
Highlights 🐶 Eleanor tries her best to help but decides she's "out" when she can't find a comfy spot to lay down. 🐕 Kira watches like a total "peoples" waiting for her cue. 🧀 The ultimate moment: stopping everything to pay the mandatory Cheese Tax to the pups. 🍿 Jamie walks in and realizes the kitchen smells exactly like a movie theater.
This video provides a step-by-step guide to making Mexican street corn served in a bowl rather than on the cob. The host demonstrates how to sauté corn and mix it with a creamy, spiced sauce to create a flavorful side dish that is easy to replicate at home.

Ingredients!
And oh my gosh, you guys, look!
Second best kitchen helper ever.
Still being referred to as second best kitchen helper ever because she hasn't figured out
how to lay down in here.
She leaves the kitchen like she's gonna do right now.
She's like, and I'm out.
Oh, maybe, maybe, okay, stick around.
That's what I would like you to do.
Third best kitchen helper ever.
Sitting over there like a people's.
Welcome back to Snow Dogs Cooking where if I can cook it, so can you.
I had corn that I needed to use and I was trying to find something fun to make with
corn and I didn't really want to make soup because it's not soup season.
So I am making Mexican street corn, not on the cob, like in a bowl.
I was gonna make a Mexican street corn dip.
We're gonna make Mexican street corn.
I've never made it before.
I read a bajillion different recipes and a bajillion different ways to make it and I
asked Dan if he had a recipe, but he buys it from a lady on the street.
So hopefully this is close to what it's supposed to be like.
I did make sure to get the right cheese and the right sour cream.
They have this at Walmart.
They had this at Walmart as well.
So if you're looking for it, that's where I found it.
So what are you gonna need for this?
You're gonna need three cups of corn.
I'm using fresh corn.
You can use canned corn, drain it, or you can use frozen corn as well.
And I would slightly thaw the frozen corn.
If you're using fresh corn, technically it's supposed to be blanched, but mine was pretty
much fully cooked.
It'll be fine.
It'll work out.
We're gonna need some butter because we want to fry up this corn.
We're going to need a teaspoon and a half of chili powder, a quarter of a teaspoon of
paprika, a quarter of a teaspoon of garlic powder.
We're gonna need about a tablespoon of fresh squeezed lime juice, which of course you can
add more or less or however you would like to do it.
You're gonna need a quarter to a half a cup of this cheese that I'm never gonna be able
to say the name of, two tablespoons of the Mexican style sour cream, and two tablespoons
of mayonnaise.
That's it.
That's all you need for this.
Let's get this started.
You're gonna get a pan.
You're gonna put it on the stove at about a medium to high heat, medium high.
Put your butter in there and let it melt.
You basically want to grill this corn.
If you have a Blackstone, you could also do this on the Blackstone, but Jamie's making
burgers on the Blackstone right now, so I'm just gonna use this so I'm not in the way.
Butter's pretty much melted.
Go ahead, put your corn in, and then stir it around.
This is always the hardest part for me.
We're gonna cook this for about eight minutes.
Try to leave it for two minutes, then stir it, then two minutes, then stir it, because
we want it to have like a little bit of a, you know, like you want to brown it just a
little bit.
So, hardest part.
I can do this.
In a bowl that's gonna fit all your corn.
We're gonna go ahead and start mixing the, I guess you'd call it a sauce, together.
So for that, first we're gonna use two tablespoons of mayonnaise, or an eighth of a cup I guess,
into the bowl.
Okay, I gotta get this in here.
Got it in there.
Now, two tablespoons of the Mexican style sour cream.
If you can't get this, you can just use regular sour cream.
To this, we're gonna add a quarter of a teaspoon of garlic powder, about a quarter of a teaspoon
of paprika, one and a half teaspoons of chili powder, one tablespoon of fresh squeezed lime
juice.
Now I'm gonna whisk all this together.
See how it's starting to get that, you can see where it's getting brown on the outside?
That's about what we want.
We're about six minutes in right now, so I'm letting it go another two minutes, and then
I think I'm done.
And then, the cheese!
It says to use a quarter to a half a cup, and I like cheese, so I think I'm gonna use
the whole half a cup.
We're gonna see if this is gonna be delicious.
Oh, I gotta get my cilantros ready!
Cut some of this up to put on top.
I think that's about what I want it to look like.
I'm gonna take this whole pan, pour it in here.
Alright, my container of cheese is a half a cup, so I'm gonna go ahead and put quite
a bit of this cheese in there, and now I'm gonna stir it around!
Well, silly me!
I almost forgot to pay the cheese tax!
Is that good cheese?
She's like, heck yeah, that's good cheese!
Alright, let me get it for the other one.
You're gonna make me bring...
Yeah, come over here!
Come over here!
Right here!
Look!
Put it right there!
Then, it's not on the carpet!
I was gonna let you lick it out of my hand, but that works pretty good too.
Gotta pay that cheese tax!
Oh my goodness!
I almost forgot!
That's what happens when you don't all hang out in the kitchen with me while I'm cooking!
You get forgotten about!
Not really!
Add a little bit of cilantro!
That looks and smells amazing!
Oh my goodness!
I can't wait to eat this!
This smells phenomenal!
Okay, Mexican street corn!
It smells like popcorn in here!
Yeah, it does!
Patty melts!
That's funny, because Dan thought I sent him a picture of a Reuben!
He'll just have to come visit, so we can get those!
It's probably been a long time since you had Mexican street corn.
I think, probably since we lived in Arizona.
I've had it since then, but...
There is a little bit more fresh squeezed lime juice you can put on there.
Yeah, that's what I got at the very end.
A little bit of cilantro.
I have more cilantro, so you can sprinkle more of that on.
Is that a win?
It's really good!
I already tried it!
Yeah, it's not spicy!
Nope!
It's flavorful!
You can make it spicy!
I could have made it spicy, but I kept it milder, because our levels of heat are different.
But, look at it!
That's got a lot of different flavors!
I know, I might have to make it for game night now!
It's so good!
So, in conclusion, having never had made street corn at home before,
that was amazing!
That was so good!
We were already talking about, we should make it for game night.
Maybe, we should try the dip.
Maybe, we'll try it as corn on the cob, the next time we make it.
That was really good!
If you've been waiting to try it at home,
this recipe was really good!
Somebody has to make it, who's also had it at other places.
Tell me, if it tastes just as good!
Because, it was really, really good!
