Jamie requested pot roast, and even though I originally planned to make it in the slow cooker, I completely forgot to start it early. So we are making this quick, easy, and super tender pot roast right in the Instant Pot! An Instant Pot pot roast is hands down the best way to get fork tender beef, perfectly cooked potatoes, sweet carrots, and rich homemade gravy on a busy weeknight without waiting eight hours.
This pressure cooker chuck roast recipe is an absolute lifesaver when you need comfort food fast. We sear the meat first to lock in all that juicy beef flavor, cook down some onions and garlic, and deglaze the pot with beef broth, Worcestershire, and tomato paste. Everything pressure cooks to melt in your mouth perfection, and we make a quick savory gravy right at the end using the juices left in the pot. It is hearty, super simple, and the leftovers are incredible for easy camping meals!
Ingredients
3 pound boneless chuck roast
1 and 1/2 pounds small bite size potatoes
1 bag baby carrots (or 6 medium whole carrots)
1 small onion, finely chopped
4 cloves garlic, minced
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 and 1/2 to 2 cups beef broth
1 teaspoon dried thyme or 4 to 5 fresh sprigs (optional)
2 tablespoons cornstarch
2 tablespoons cold water

🐶 Eleanor was working hard as the second best kitchen helper ever, hanging out on the kitchen floor and making sure she collected her baby carrot tax before the meat even finished cooking.
🐾 Kira was hiding from the scary kitchen sounds even though the oven was not on, but once the searing was over, she braved the kitchen to get her crunchy carrot treat too!

Tips and Tricks
🥩 Do not skip searing your meat because searing the chuck roast first creates incredible flavor, and you will know it is ready to flip when it easily releases from the bottom of the pot.
🧅 Always deglaze the bottom of your pot with the broth liquid after sautéing the onions and garlic so you lift up all those tasty browned bits and avoid getting a burn notice.
⏱️ Cook your roast first for one hour, then add your veggies for just 5 minutes of pressure cooking at the very end so your potatoes and carrots do not turn to complete mush.
🥘 If you are using a 6 quart Instant Pot instead of an 8 quart pot, cut your chuck roast in half so it fits much better inside.
🍲 You can easily make this in a slow cooker by searing the meat in a pan on the stove first, then tossing everything in your crockpot on low all day.
⛺ Make this meal ahead of time for RV camping trips because the meat and veggies reheat beautifully over a campfire or in the camper the next day.
