Hey, it's Catherine McCord from Weelicious.
I'm so excited to be teaming up with Byron
to share our dye-free St. Patrick's Day desserts.
I've been making these avocado lime parfaits.
They're naturally delicious and sweet.

Hey, what's up, guys?
Welcome back to my channel.
Today, I'm gonna show you how to make
some delicious mint chip ice cream
with all-natural flavors and all-natural coloring.
So let's get started.
All right, so first up,
we're gonna get a pot of boiling water going
and make sure you have an ice bath ready to go.
And then you're just gonna basically blanch
a handful of mint and parsley, believe it or not.
And you're just gonna take about 30 seconds to cook this.
And then once that's done, you're gonna take it out
and quickly shock it in a bath of ice water.
Next, you're gonna transfer the cooked mint and parsley
to a blender and blend it on high speed
with a little bit of cold water
for about two to three minutes
until you have a really beautiful, vibrant green puree.
Once the puree's done, you're gonna strain it
into a bowl that has your cream in it.
Once that's done, you're gonna add
about a cup of sugar for sweetener
and then a pinch of salt.
Give this a good whisk
until everything is completely incorporated.
Once the ice cream base is ready to go,
you're gonna transfer it to your ice cream machine
or a nice little KitchenAid attachment like I have here.
Turn it on low speed and you're gonna churn the ice cream
for about 30 minutes or so,
depending on the temperature of your kitchen.
And you really want it to be this really smooth
but thick and creamy texture.
And once that's done,
you're gonna add some shaved chocolate to it,
give it a good mix,
and then you're gonna put this in the freezer
to set up for about two hours.
All right, so once the midship ice cream is set up,
pull a chilled glass straight out of your freezer,
scoop a few scoops straight inside.
You can top it with any of your favorite toppings
if you enjoy doing that.
But really, this is one of those beautiful ice creams
that should be left alone,
and it's refreshing and all natural from the ground up.
Wow, this looks really, really good, guys.
Mint chip ice cream is definitely one of my favorites.
I just love the texture of it.
I love that minty flavor
and the chocolate kind of melts in your mouth as you eat it.
And it has that crispy texture as well.
Just a solid recipe, a solid ice cream.
And I know most people are mint chip lovers,
so this is definitely a recipe for most people.
And it's nice to have all those natural ingredients
and none of the artificial dyes or artificial flavoring.
So definitely a solid recipe,
definitely a solid recipe for St. Paddy's Day
and using those natural flavors and those natural colors.
Let me test this and tell you guys how I did.
And yeah, that's a solid mint chip.
I don't know if you can hear the crunch.
I put super, super dark chocolate in this,
just because I love dark chocolate.
And it's already kind of sweet,
so I think I put, it was 100%.
So it's definitely bitter chocolate,
but it's really, really good.
Texture's on point, really smooth, great fresh product.
The green turned out, it's a little bit of an army green.
I don't know if you guys can tell on camera,
but I really like this color
as opposed to like an artificial dye
where it's like really that vibrant
sort of almost pastel green.
And this sort of just shines through
that it's really natural.
Hopefully you guys enjoyed this recipe.
