Simple Hamburger Tomato Basil Soup!

Welcome back to soup season! Today I am making one of our absolute favorites, Hamburger Tomato Basil Soup. It is so incredibly easy to throw together, making it the perfect dump and go comfort food meal for a rainy chilly day. If you love rich tomato flavor packed with savory ground beef and fresh herbs, this easy soup recipe is going to become a staple in your kitchen.

The best part about this simple homemade hamburger soup is how customizable it is. You can eat it exactly how we make it here, or you can use it as a hearty base and add whatever your family loves. I used to make this back at the deli and it was always a huge hit. Plus, it freezes beautifully so you can save some for later in the week when you do not feel like cooking.

Of course the kitchen helpers were right underfoot the whole time! Eleanor and Kira were hoping for some goodies but they were not very impressed with my offerings today. I tried to see if they wanted a tiny nibble of fresh basil and that was a total flop. Then I handed out some oyster crackers. One gobbled it right up but the other gave me the funniest face with crooked ears. We still miss our best kitchen helper Memphis so much since she passed away on June 6, 2026, but the girls are doing their best to keep the kitchen floor secure.

➡️ Ingredients
1 pound of hamburger
1 tablespoon of butter
1 small diced onion
4 cans of petite diced tomatoes
1/8 cup fresh basil
2 to 3 cloves of garlic
Salt and pepper
Garlic powder
3 cans of water
1 and 1/2 tablespoons of beef base
Oyster crackers

Tips and Tricks
🥣 Add barley or noodles to turn this into a super filling spaghetti soup!
🧀 Make a gooey grilled cheese sandwich to dip right into the broth.
🍅 Mix it up by using two cans of petite diced tomatoes and two cans of fire roasted tomatoes.
🌿 If you do not have fresh basil on hand, you can substitute two teaspoons of dried basil or basil paste.
🥕 Throw in some extra veggies like diced carrots or celery when cooking your onions.
❄️ Make a giant double batch because this soup freezes amazingly well for meal prep!
