So it's officially spooky season, and for me that means Castlevania.
So let's make a big mess of tasty meat.
Meat is as ubiquitous to Castlevania as ghouls and Draculas,
but this version always looked the tastiest to me.
The one that's actually called tasty meat.
Instead of making a big honking steak,
I'm gonna slice this here chuck roast into cube steaks.
So this recipe is both tasty
and much more affordable than, say, a T-bone or ribeye.
$14.94, not a bad price.
First you're gonna wanna slice
your big honking roast into quarter-inch to
half inch slices. Once they're sliced,
equip something spiky and pulverize that meat. Really
mash it up. Then salt and pepper and then set them aside for a sec.
In a small bowl go some flour,
garlic of course, pepper, and smoked paprika.
Now lightly dredge the steaks on both sides.
I'm gonna cook mine in this big heavy griddle.
In go some butter and olive oil, and once it's hot,
slap on that meat. Jiggle around the pan a little.
After a couple minutes, flip and cook on the other
side. It should look nice and brown like this.
Alright, evacuate all your pieces to a plate and
toss in an entire minced onion and a little bit of water.
This is going to help the onions collapse
quicker because we're going to want
to cook them until they're super caramelized. Once the water
evaporates, you can add a little bit more butter or oil if you need it.
Stir and cook the onions
more, a little more. Perfect.
At this point, you can toss in some minced garlic, which is really
good at keeping away those draculas.
Then squirt in a little bit of tomato paste. Then you want
to make sure that the tomato paste makes contact
with the pan so it can take on a little bit of
color. At this point, you can stir in some
of your reserved flour that you use for dredging.
I used two tablespoons here,
but I would suggest that you use about one and a half tablespoons
because my sauce came out more gloppy than I'd like.
Cook it a little bit to get the raw flavor
out. Then pour on some water.
All right, you can add your meat back to the pan. Add a little bit
Worcestershire sauce and bring to a boil
then cover and simmer on low for about
an hour and a half at this point
your meat will be super duper tender but
we're not done yet take all the steaks out of the pan
and then taste your sauce
all right I'm gonna season it
with a little bit of beef bouillon and some
gravy booster this is gonna make the sauce nice
and dark you can leave it out
though once the sauce is to your liking you can put
your steaks back in and let
them heat through and then you can serve
it I like this tasty meat on top of
of mashed potatoes and some garlicky green beans
and some pickled peppers if you like and that
pairs really well with this too like
the name says castlevania inspired meat is tasty but more
importantly it is yummy
if you want more castlevania recipes check out this one for rotten
meat which isn't actually rotten
and actually tastes very good see you next time bye
