Ginger ale, the old, old-fashioned way.
Here's what you need.
First, peel your ginger and grate it super, super fine.
I use my, well, ginger grater, but you can use whatever you have.
You can use a good knife and a little bit of persistence if you like.
In a large saucepan, bring your sugar and one cup of water to a boil.
Add your lemon and your lime juice.
Add your lemon and your lime zest.
And then add your pulverized ginger.
Stir, let it boil for a few minutes, then turn off the heat.
cover it and let it steep for a few hours.
Alright now strain your ginger
elixir and save
your jokes potty mouths I know what it looks like. Now you can
use whatever yeast you have to make bubbles happen
but things can get pretty
grisly if you use bread yeast
so just spring for the champagne yeast okay?
You'll need about an eighth of a teaspoon. Stir it into a little bit of
your cooled syrup and then add your syrup
to eight cups of super clean water.
Stir and pour it into bottles.
You can use any soda bottle you want just make
sure that it's super clean.
I'm talking hot water spiked with bleach clean.
Microbes make homemade ginger ale taste kind
of like farts, and you don't want
that. Once your ale is bottled,
rest it in a warm place for two to three days. Then
move it to the fridge for one more day.
If all turned out okay, it should be
beautifully carbonated! Like that!
Fill a tall glass with ice, maybe a sprig of
mint, and guzzle it down.
Hey, don't be so blue there, chubs! You can always make
more.
