Steve's Lava Chicken...it's a Lava Attack! And it's also the reason my channel recently crossed the 100,000 subscriber mark. To celebrate the occasion, I'm making a full-fledged version of this that doesn't require lava, but is still super tasty!
Here's how you make it!

Hey everybody, it's Tammy, and Lava Chicken!
It sounds crazy to even say, but Jack Black's latest little ditty
is not just the song of the summer,
it's also the reason that my subscriber count
is officially over 100,000 strong!
Where the hell is my play button, YouTube?
So I figured, to commemorate this awesome little occasion,
I would make a version of Lava Chicken
that tries to honor the kind in the movie.
Now, I don't own a Volcano,
so sourcing the lava is going to be really hard,
but I think I've devised a recipe
that honors the spirit of lava chicken,
even if I don't have actual lava.
No, I don't think that's cheating. No, we don't have lava,
but that doesn't mean that we can't make
a super spicy delicious chicken that'll have you
ringing the bell. What bell? Who knows?
Jack Black knows, but he won't talk to me,
Because I keep making fun of that awful movie
that he made early on in his career.
You know, the commercial for the video game Pitfall.
To make the marinade,
grab a small pot and pour in some Frank's red hot sauce,
sriracha, ranch seasoning, two cloves of minced garlic,
butter, a little brown sugar,
and a few cranks of pepper.
Bring these ingredients to a simmer and cook until you've got a thick,
bubbly mess. You know, kind of like lava.
Should take about five minutes or so over medium heat.
Taste it. It should be pretty strong.
That's good. It's gonna flavor an entire chicken.
Let this cool to room temp.
And technically, I'm not using a chicken. I'm using a Cornish
game hen. These are much easier to cook than
a full chicken, and if you ask me,
they're tastier too. I love these little guys.
But before we apply the sauce, we're gonna do
some minor surgery.
Using kitchen shears, snip around the bone on each of the legs.
Then you can yank off the sinew and the skin.
This part is optional, but it'll ensure that
the bone is exposed so it looks a little bit more like it does
in the movie what's not optional is
to slide your fingers underneath the skin
of the bird primarily on the breasts and the thighs this
will ensure that you will get crispier skin
and better tasting meat place your chicken in a big
bowl and pour on that lava marinade really work it
into the chicken especially under the skin
okay set this aside before we assemble another optional addition now
this chicken is going to
give off a lot of juices as it cooks
and it would be a shame to waste all of them
and nothing soaks up juice is better than potatoes peel
and dice these bad
boys and then place them in a bowl nuke them
for two minutes just to give them a
head start take them out stir them up
with a spatula careful they're hot and
then nuke them for another minute
and a half now you can drizzle on some butter
and season with salt
or better yet some more of that ranch seasoning a little bit
of pepper too. Mix to combine. Line a small baking sheet with foil,
then arrange your potatoes nicely
on the sheet pan, and plop your chicken on top.
And then tuck the wings under the bird. I trust
it's legs together, but that's optional.
Slide it into a hot oven. This is lava chicken after all,
and we want this bad boy as crispy
and delicious as the in movie version. It's been in my oven for
about 30 minutes, and it looks pretty perfect,
but I would start checking it after 20. I'm gonna stick
my thermometer in the deepest part of the thigh to see if it's cooked.
If it's 180 degrees Fahrenheit,
it's done. Pull your chicken from the oven
and grab some tongs and grab your chicken
and carefully drain the whole over those potatoes.
Remove your chicken to a plate to rest for 10
minutes. Carefully flip each piece of potato
so that it can soak up more of those chicken juices
and let them rest in your warm oven while the chicken rests.
Now this chicken is amazing,
But if I had to pick between these two,
I'd probably pick the potatoes. That's how good they are.
To serve, make a small bed of potatoes on your plate
and top it with some of that sliced chicken.
Lava chicken, a catchy song, a goofy video craze,
and now a recipe that's most definitely
yummy. Thanks for watching.
