Igarashi Castlevania games (most of them) have a pretty gnarly food item in them that is basically a plate of rotted meat. If you eat it...it hurts you! But what if it didn't? This is my real-life recipe for this iconic Castlevania item.
For meat: 2 slices bacon 1 pound ground beef 1 onion, minced 4 cloves garlic, minced 1/2 carrot, grated 1/3 cup white wine 1/4 cup sherry vinegar 1 TBL ketchup 1/2 tsp gravy booster Salt+Pepper+MSG, to taste
For prunes: 10 prunes 1/4 cup brown sugar 1 cinnamon stick 4 peppercorns 1/4 cup sherry 1/2 cup water 1/2 tsp sherry vinegar Pinch of salt
To serve: Mashed potatoes or rice Chopped parsley
For steeped prunes: Place all ingredients in a small pot. Bring to a boil, and simmer for 20 minutes or until prunes plump up. Remove prunes from the pot to a bowl, and refrigerate until needed. Reduce the liquid in the pot until reduced by half, about five minutes. Set aside.
For Meat: Place a steel pan on your highest burner. Douse it with no-stick spray. Cook bacon until crispy, then set it aside to cool. Heat the pan Take your meat of choice and spread it as thinly as possible in a single layer. Cook until deep golden brown. Drain most of the fat out before proceeding.
Flip meat to cook on the other side. Add onions, carrots, and garlic to the pan. Cook this entire mess for about five minutes or until everything takes on a bit of color. Add your wine and your vinegar and scrape the bottom of the pan to get all the browned bits off.
Add ketchup, gravy booster, and season to taste with salt, pepper, and if you have it, MSG.
To serve: Slice prunes in half. Slice cooked bacon into crumbles. Pile some mashed potatoes or rice on a plate. Top with meat, chopped bacon, prunes, and parsley, or use the meat as a filling in a sandwich.

Don't eat the meat! It's rotten!
It's...
It's... ROTTEN!
Castlevania. The good ones.
If you kill a zombie or a ghoul,
uh, sometimes they drop this plate of rotten meat.
If you look at it, it looks pretty awful.
Right?
You gonna eat that? I'm not.
And if you do eat it, it hurts you.
Probably gives you a tummy ache.
You know, like when you eat White Castle at 2am.
But what if...
What if...
It tasted really good?
That's what I'm gonna do.
I'm making rotten meat, and it's gonna be delicious.
This whole recipe is inspired
by a German dish called sauerbraten, which is a roast,
usually beef, and it is marinated in vinegar for a few days
and then braised.
So you know, it's still gonna be funky,
it's still gonna be a little out there, but it's
gonna be delicious.
But more importantly, it's gonna look like this.
Spooky and a little bit upsetting.
First, a garnish.
In a pot goes water, sherry, brown sugar,
cinnamon, and peppercorns, and prunes.
Trust me, I know they're prunes, but they're good,
and they're going to be even better
once we poach them.
Just be glad they're not raisins.
A pinch of salt, and a tiny bit of vinegar.
I'm using sherry vinegar.
It's one of my favorites, but you can use red wine,
you can use balsamic, don't use
regular white vinegar, it's too strong for this.
Bring it to a boil, then simmer these for 20 minutes.
Then remove the prunes and set them aside.
Now cook the poaching liquid until it reduces to about a quarter cup.
Set that aside.
Now we're gonna need some meat.
I'm using 80-20 ground beef, but you could use turkey,
or chicken, or pork, or ghoul.
Don't use actual rotten meat by the way, alright?
Check your expiration dates, or at least do a sniff check.
Whatever you use, have it ready.
your whitest skillet and douse it with non-stick spray.
Cook two pieces of bacon
and then set them aside.

because you like the video, but because I eat them, alright?
If you drop a like and

I love them. Add your meat
and try to get it into one thin, even layer.
Cook this on high until the meat's
golden brown and crusty. Like that. Mmm.
Now scrape the meat off the bottom to
loosen it. Alright, turn off the heat and drain the fat a little.
Carefully. We only need about
a tablespoon or two of fat in the pan itself.
In go onions, minced, and carrot, grated. And this is
Castlevania, so garlic is always a welcome ingredient.
Stir in and cook for about five
minutes or until the veggies take on a little bit of color.
Add wine and some vinegar. And you want
to scrape the brown bits off the bottom when you do that.
Lots of flavor there. Toss in that
reserve prune elixir to give it a squirt of ketchup
and some gravy booster you
can find it in most stores it's usually
called gravy improver or gravy booster
or browning sauce get some it's cheap
and it's delicious go easy you don't
need much now taste it and season with salt pepper
and MSG okay to serve you're
gonna need a pile of starch potatoes
or rice would work best here this is a
cooked chicken bone.
Totally optional, purely for aesthetics. Pile on that meat,
thaw it with some prunes that you sliced in half,
crumble on the bacon, and add
tons of chopped parsley. It's done! How'd I do?
Rotten meat from Castlevania is... yummy!
